I am still having fun with my new outdoor pizza oven. My latest pizza was inspired by leftovers that I had in my refrigerator from these Southwest Chicken Foil Packets.
This pizza is perfect for a Meatless Monday Meal. A base of tomato sauce flavored with taco seasoning mix, corn, black beans, fresh tomatoes, and onions topped with shredded Mexican blend cheese.
We will sing at Kirsten's Birthday Mass this afternoon and then celebrate with a Fish Fry at John's afterward. I love his tradition of keeping her memory alive with a yearly birthday celebration. I am bringing a Kale Slaw and a Pasta Salad.
Tomorrow the choir is going over to our member, Eleanor's house to celebrate her 100th birthday. We are each bringing a dish. I am bringing Chicken Marsala and Pasta Alfredo.
Monday are meeting the Bonacorsis and Luths for lunch. Dinner is another Meatless Monday Pizza. Stay tuned for that recipe.
Thursday we are taking Marissa and Aiden to Hibachi Grill for her birthday dinner and then celebrating with the rest of the family on Saturday.

Southwest Pizza
This pizza is perfect for a Meatless Monday Meal. A base of tomato sauce flavored with taco seasoning mix, corn, black beans, fresh tomatoes, and onions topped with shredded Mexican blend cheese.

Ingredients
- Dough for 1 pizza, storebought or homemade
- 1 c. black beans, rinsed and drained
- 1 c. frozen corn kernels, thawed
- 1/2 c. taco sauce
- sliced onion, to taste
- 1 tomato, diced
- 2 c. shredded Mexican Blend Cheese
Instructions
- Roll out pizza dough to desired size, thickness, and shape.
- Spread the taco sauce in the center of the dough leaving 1/2-3/4" for the crust.
- Sprinkle evenly with the black beans, corn, onions, and tomatoes.
- Sprinkle the cheese over the top and bake in a preheated 450* oven for about 10 minutes until browned, hot and bubbly.
