July is National Blueberry Month and we are having a Foodie Extravaganza!!
Love spending time in the kitchen and entertaining family and friends? Me too. I look for reasons to celebrate and I don't have to look very far. Every month has loads of food holidays so there is no lack of topics to explore.
This month is National Blueberry Month so I asked some of my friends to join me for a Blueberry Extravaganza. Let's take a look at what they brought to the party......

Pork and Fruit are a common dinnertime treat, however, you needn't limit yourself to apples when serving pork. Although apples are delicious especially Fried Apples or this easy peasy Homemade Apple Sauce.
But many other fruits lend themselves to wonderful pairings with pork. I am featuring an herbed blueberry sauce today but a Blueberry BBQ Sauce is also wonderful. Pineapple is a natural with Ham but this Pineapple Salsa is perfect for any cut of pork. You can spice up pork with a Pear Chutney or skewer it with Nectarines.
But this post isn't about pork...it is about celebrating blueberries!!! So let's get started with a Blueberry French Toast for breakfast. We can follow this up with a Grilled Chicken Salad with Blueberry Vinaigrette for lunch. Dinner will be amazing starting with this Blueberry Thyme Tequila Smash followed by Grilled Mahi Mahi with a Wild Rice Blueberry Pilaf.
Let's not forget dessert.....perhaps some Blueberry Cheesecake Ice Cream with Blueberry Pie or a Lemony Bundt Cake with Blueberry Jam Filling.

Grilled Pork Loin Chops with Herbed Blueberry Sauce
Boneless Pork Loin Chops grilled to perfection and then topped with a Basil and Thyme flavored Blueberry Sauce.

Ingredients
- 4 thick cut Pork Loin Chops
- salt and pepper, to taste
- garlic powder, to taste
- cumin, to taste
- 1 pint blueberries
- 1/4 c. brown sugar
- 1 T. balsamic vinegar
- 2 T. butter
- leaves from 3 sprigs thyme
- 6 basil leaves, chopped
Instructions
- Season the pork chops with salt, pepper, garlic powder and cumin. Grill over med high flame for 10 minutes. Flip and grill for another 8-10 minutes until an internal temperature of 145* is reached. Place onto a serving plate, tent with foil and let rest while you make the sauce.
- Place the blueberries, vinegar, butter, brown sugar, thyme leaves and basil in a saucepan over med high heat. Season with salt and pepper and cook, stirring frequently until blueberries begin to break down releasing their juices and the sauce thickens slightly about 5 minutes.
- Pour the sauce over the chops and serve.
