This pineapple casserole is sure to become a family favorite. They will love it because the taste and you will love it for the ease of preparation.
You can use fresh or canned pineapple in this recipe. It can be prepared ahead of time but do wait to put on the bread until right before you bake it so it bakes up crisp.

Pineapple Casserol
This scrumptious pineapple casserole is perfect with that ham that you are baking up for Christmas or any Holiday dinner.
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 1 Vidalia onion, diced
- 12 T. butter, divided
- salt and pepper, to taste
- 1 (15 oz) can crushed pineapple
- 1/2 c. sugar
- 1/4 c. flour
- 6 eggs
- 12 slice white bread, crusts removed and cubed
Instructions
- Melt the butter in a skillet over medium heat. Add the onion, season with salt and pepper and cook until fragrant and beginning to caramelize, about 10 minutes. Set aside to cool.
- Whisk together the pineapple, sugar, flour and eggs. Stir in the cooled onions and transfer to a baking dish or casserole that has been treated with cooking spray.
- Melt the remaining butter and toss with the bread cubes until absorbed. Place on top of the pineapple mixture and bake in a preheated 400* oven for about half an hour, until golden brown.
