Turkey Hollow Beet Hummus #MoviesandMunchies

I was doing a search on my television for Thanksgiving Movies and came across Jim Henson's Turkey Hollow which evidently was a made for TV movie that was shown on Lifetime in 2015.

I was not familiar with this movie at all but I do love the Muppets and their movies are always fun so I decided to see if the members of our Movies and Munchies group wanted to join me in watching it for November.

This film stars Mary Steenburgen as Aunt Cly a Mushroom Growing, Turkey Loving, Devil Woman according to her evil neighbor, Eldridge Sump played by Linden Banks, who owns a turkey farm that is not humane and treats the turkeys with steroids in order to grow them larger and make more profit.

Recently divorced, Aunt Cly's nephew Ron (Jay Harrington) arrives on her porch for Thanksgiving with his Teen and Tween, Annie and Tim.  Upon entering Turkey Hollow they see a sign telling of the Howling Hoodoo and stop at a tourist shop where they learn of a monster who lives in the woods attached to Aunt Cly's property.  

Ron tells his kids it is all just a silly legend but that they should not mention anything about it to Aunt Cly as her deceased husband believed that he had seen the Howling Hoodoo.  Tim stumbles upon the deceased uncle's workshop and journals and the fun begins..........

When Ron and the kids first arrive at Aunt Cly's she sniffs them and immediately knows that they are "meateaters".  Aunt Cly is a vegan and when she tells them dinner is ready she says "I hope you like beets".  Later when she offers them dessert she says "I hope you like beets".

Hence, my inspiration for this vegan Beet Hummus that I placed on an appetizer buffet with mini pitas and fresh veggies.  I also had crab puffs and charcuterie but we won't talk about that LOL.....

I have to say that if Aunt Cly gave those kids this Beet Hummus, they would be some happy campers.  This hummus has all the lemony, garlicky goodness that we love combined with the earthy sweetness of the roasted beets.  Not to mention how gorgeous it is with that neon pink color!!!

Beet Hummus

Beet Hummus

This hummus has all the lemony, garlicky goodness that we love combined with the earthy sweetness of the roasted beets. Not to mention how gorgeous it is with that neon pink color!!!
Prep time: 10 MinTotal time: 10 Min

Ingredients

  • 2 small or 1 large beet, roasted (method)
  • 1 (15 oz) can chickpeas, drained
  • zest and juice of 1/2 large lemon
  • salt and pepper, to taste
  • 3 cloves garlic, minced
  • 2 T. tahini
  • 1/4 c. extra virgin olive oil

Instructions

  1. Place the roasted beets in the bowl of a food processor and pulse until minced.
  2. Add the chickpeas, season with salt and pepper, add the lemon zest and juice and the garlic. Pulse a few times and scrape down the sides.
  3. Turn the processor to puree and drizzle in the olive oil as it runs until hummus is desired consistency, scraping sides down as needed.
  4. Taste and adjust seasonings and add a bit of water, if needed.

  1. I could not get into a beet theme. But this sounds amazing. I made some beet hummus from a mix once and I liked it. A lot. I am posting next week for this event. I'll email you the link then.
