Codfish Cakes and the Weekly Menu

These Codfish Cakes are amazing!!!  If you like Crab Cakes and Salmon Patties you are going to think that they pale in comparison.  I know I did.

Ingredients for Codfish Cakes

Codfish cakes are very popular in the Bahamas and there are tons of different recipes that you can find doing a Google search.  I read through them and then made my own version.  My biggest adaptation was substituting mashed sweet potatoes for the regular potatoes.  It was a genius choice.  It took these codfish cakes up and beyond the expected.

Here is a little tip.  When making fish or seafood cakes line a muffin pan with plastic wrap, fill each indentation with your ingredients and cover with another sheet of plastic.  Place in the refrigerator until ready to prepare.

Codfish Cakes

Lift the plastic wrap out and turn out the fish or seafood "muffin", dredge this in your flour or breadcrumbs and place it in the hot oil in your pan.  Then use a spatula to flatten them into cakes.  No more having your cakes fall apart on the way to the pan.

Cook them in batches so that they can fry up nice and crisp.  Place them onto a paper towel lined plate and keep warm while cooking the rest.

I served mine up with a side of baby greens that I had sauteed with garlic.  I drizzled a salsa verde over the top.  I served Frank's sans the salsa as he is heat intolerant and added some cheese pasta to his plate as I wasn't sure how he was going to enjoy the codcakes.  I needn't have worried.  He enjoyed the codcakes very much.

A dear friend is having surgery tomorrow. Please keep her in your prayers.  I hope to be allowed into the hospital to join her son as we wait for, what I'm sure, will be good news.  Frank and I will be going out to dinner.

On Saturday we have Frank's brother and his wife coming over for dinner.  It has been a long time since we have had a chance to sit and visit, just the 4 of us.  I'm looking forward to it.  Tuesday night we have choir as we get ready for the Christmas season.  Thursday night we are taking the Angel Face to see the Sound of Music.  

Then we start heading towards the Thanksgiving Holidays....Holy Cow!!!

Codfish Cakes

Codfish Cakes

These Codfish Cakes are amazing!!! If you like Crab Cakes and Salmon Patties you are going to think that they pale in comparison. I know I did.

Ingredients

  • 2 cod fillets, cooked and flaked
  • 1 sweet potato, cooked and mashed
  • 1 egg
  • 1 t. seasoning salt (I used old bay)
  • pepper to taste
  • pinch of thyme leaves
  • handful of parsley, chopped
  • 1 small onion, minced (I used a shallot)
  • Olive oil
  • flour
  • Avocado Salsa for serving, if desired

Instructions

  1. Combine the cod, potato, egg, seasoning salt, pepper, thyme, onion and parsley in a bowl.
  2. Form into patties and coat lightly with flour.
  3. Heat a couple of swirls of oil in the bottom of a large skillet.
  4. Add the patties, in batches if needed, and cook on both sides until golden brown and heated through.
  5. Top with Avocado Salsa, if desired
