Sue of Palatable Pastime is hosting this week and asked us all to share a recipe containing melon of any type.  I decided on a Watermelon Cocktail.  Let's see what the others are sharing.......

Watermelon Mojitos

When I saw this recipe from Food Network it sounded delicious so I printed it out and put it in my to make file.  When Sue announced the theme for this week's Sunday Funday Blogging group I remembered it and pulled it out.

I still have a garden full of mint so Mojitos are a popular drink here on the Farm.  I was anxious to try this watermelon version.

This cocktail is perfect.  It is light and refreshing.  More tart than sweet and very flavorful.  It is going to be a regular offering here when we are entertaining poolside.
