I served these up on Memorial Day but they are really perfect for anytime and would be especially wonderful when we celebrate Independence Day next month.
I know I shot some photos of the entire pan of these bars but I can't seem to locate them anywhere. I'm just grateful that I had taken this shot of a piece that I cut for myself to enjoy the day following the festivities.
Yesterday we were at a Memorial gathering for my nephew's mother where we had a casual dinner with him and those who love him.
Today our choir group is coming over for a BBQ. I'm looking forward to it. Tuesday night we are taking the Teen, Roz and our niece, Danielle, to Mean Girls, the Musical. We are having dinner out before the show. Wednesday we are meeting Bob and Cathy for lunch and then all coming back here to lounge around the pool and I'll put out Charcuterie for a light dinner.

Patriotic Jello Bars
These Red White and Blue bars are the perfect dessert for your July 4th Potluck but are delicious and welcome anytime you want to feed a crowd.

Ingredients
Crust
- 36 Golden Oreos
- 1 stick butter, melted
Layer 1
- 1 pkg. (4 serving) Strawberry Gelatin
- 2/3 c. boiling water
- 1 serving (5.3 oz) Greek yogurt with strawberries
- 1 c. diced fresh strawberries
- 2 1/4 c. Cool Whip
Layer 2
- 1/2 c. butter, room temperature
- 1 c. powdered sugar
- 8 oz. cream cheese, room temperature
- 1 t. vanilla
- 1 1/4 c. Cool Whip
Layer 3
- 1 pkg. (4 serving) blueberry gelatin
- 2/3 c. boiling water
- 1 serving (5.3 oz) Greek Yogurt with Blueberries
- 1 c. fresh blueberries
- 2 1/4 c. Cool Whip
Layer 4
- 2-3 c. Cool Whip
- Fresh Blueberries and Strawberries for garnish
Instructions
Crust
- Place cookies into a food processor and pulse until crumbs are formed. Add the butter and pulse until crumbs come together.
- Empty into a 9x13" baking pan and press to cover the bottom. Place in the freezer to firm while making Layer 1.
Layer 1
- Stir the gelatin into the boiling water until dissolved.
- Whisk in the yogurt and strawberries.
- Stir in the Cool Whip until combined.
- Pour over the cookie crust and spread to cover evenly.
- Place in freezer for half an hour to set.
Layer 2
- In bowl of stand mixer, fitted with the paddle attachment, cream together the butter, cream cheese and powdered sugar until smooth. Stir in vanilla.
- With speed on low fold in the Cool Whip until combined.
- Spoon over the strawberry layer and spread evenly. Place in the freezer for 10 minutes while preparing the third layer.
Layer 3
- Place the yogurt and blueberries into a food processor and pulse 3-4 times.
- Dissolve the gelatin in the boiling water. Add the yogurt mixture, whisking to combine. Stir in the Cool Whip and then spread evenly over the top of the cream cheese layer.
- Refrigerate until set.
Topping
- Spread the Cool Whip all over the top of the jello and garnish as desired with fresh strawberries and blueberries.
- Refrigerate until ready to serve.
