The only problem was that I didn't have a chicken in my freezer. I did have some boneless, skinless chicken breasts and thighs so I went into the freezer to grab them. That's when I spied a package of ground chicken. "Hmmmm.....Why Not?" I thought. I pulled out some homemade broth that I also had in the freezer but you can use your favorite store bought broth for this too if you want.
It turned out great, if I do say so myself and it was ready in a flash. I have a busy week coming up here. We are resuming with the 3rd Friday Dinners at our Parish now that the holidays are over. Our Teen graduated from High School in only one semester in her 12th grade, finishing up right before Christmas. She will be taking some classes at the local Community College starting this week and we are having a celebration for her on Sunday.
When asked what she wanted me to make for her Graduation Party, she responded Lasagna. Great idea!! So, I decided that I would kill two birds with one stone and serve Lasagna for our 3rd Friday Dinner as well. That way I only have to spend one day preparing all the food for both gatherings.
Between these two gatherings, doctor appointments and food pantry I'm going to be kept pretty busy not to mention I need to get the house ready and clean out the garage so I can also put tables and chairs out there to accomodate all of our guests.
Yesterday was our son in law's birthday. We are getting together with him and Amy on Sunday for dinner out to celebrate.

ReplyDeleteCongratulations to the teen with an early graduation from high school. Good for her. Many blessings on her college career and the path she chooses to follow. You and your husband have given her a wonderful life and a great example of people who live a good life. Hope her sister is doing as well. Prayers for all of you.

Thank you Cathy. Unfortunately the people who adopted the sister moved out of state and have cut off all contact between the girls or any of her family telling her that they are her family now and she needs to forget about her biological family. Very sad.

DeleteMade this tonight although used rotisserie chicken since I had it…it’s very good and so comforting. It makes a ton!! You show 4 servings; which for me will probably be more like 6 but are the calories listed per serving based on 1/4 of the recipe? Thank you!
