Easy Peasy Whole Wheat Dinner Rolls #BreadBakers

Whole Wheat Dinner Rolls

These easy peasy rolls require no kneading.  Mix it together, cover the bowl with a towel and let it rise. After the first rise, punch it down, and divide the dough between cups in a muffin tin that has been treated with cooking spray.  Cover with a towel, let rise a second time and bake.

I served up these rolls with my Easter dinner.  I loved the fact that they were so easy and took such little time leaving me with the ability to take care of the rest of the dinner prep.

No Knead Whole Wheat Dinner Rolls

These dinner rolls made of 100% white whole wheat flour require no kneading. They are simple, rustic, hearty and delicious

Ingredients

  • 2 1/4 c. white whole wheat flour, divided
  • 2 T. sugar
  • 1/2 t. salt
  • 1 pkg. active dry yeast
  • 1 c. warm milk (105-110*)
  • 3 T. butter, melted
  • 1 egg

Instructions

  1. Put 1 1/4 c. flour, sugar, salt and yeast into the large bowl of a stand mixer fitted with the paddle attachment.  Turn on low to combine.
  2. Still on low speed add the milk and egg until incorporated, increase speed to medium and stir in the butter until smooth.
  3. Reduce speed to low and gradually add the remaining flour until fully combined and smooth.  You can add more flour, a Tablespoon at a time, if necessary but you are not looking for the dough to form a ball, just to be smooth.
  4. Cover with a towel and let rise in a warm spot until doubled, about an hour.
  5. Treat a muffin tin with cooking spray.  Stir the batter to deflate it and divide the dough into 12 equal portions and place into the wells of the muffin tin.  
  6. Cover with a warm, damp towel and set aside until the dough rises above the top of the tins, about 30 minutes.
  7. Bake in a preheated 400* oven until golden brown and cooked through about 15 minutes.

  5. how long does the kneading in the stand mixer with a dough hook generally take? Thank you, Lee

    1. Hi Lee. These dinner rolls don't require any kneading. When making bread that requires kneading it normally takes 5-8 minutes using the dough hook.

    1. Yes the measurements would be the same, whole wheat and white whole wheat can be used interchangeably.
