Getting Back on Track with the Weekly Menu

I didn't post a Weekly Menu for the last couple of weeks.  Life got swamped and it got away from me.  As a result we have been eating a lot of carryout, fast food and sometimes even a bowl of cereal for dinner.  Life is starting to calm down a bit now but will remain pretty busy throughout the Lenten Season.

Google Image of cereal and wine

This means it is even more important to plan my meals or I just find myself resorting to the above measures.  I found this photo in Google images and it just cracked me up......

Beef Daube Provencal with a Bandol Rouge #Winophiles

When we talk about the wines of Provence, we immediately think of Rose. After all, Rosé from Provence is some of the best in the world. It was a wine from Provence that taught me just how wonderful Rosé can be.Prior to that, being from Michigan, USA, I thought Rosé equalled the sweet pink wine we refer to as White Zinfandel.

Bandol Rouge

The French Winophiles have introduced me to a lot of knowledge regarding the wines of France.  They continue to teach me this month as, Payal of Keep the Peas, invited us to explore the Red Wines of Provence.

A Special Dinner for my Valentine featuring L'Ecole Cabernet and the Weekly Menu

I received a sample of L'Ecole No. 41 Cabernet Sauvignon from Columbia Valley for tasting and pairing purposes.  I received no monetary compensation.  All thoughts, writings and opinions are my own.

My husband is very predictable.  Whenever I am making him a special dinner he asks for either Filet Mignon with Zip Sauce, Garlic Mashed Potatoes and Glazed Carrots or Chicken Marsala, Fettuccine Alfredo and Glazed Carrots.  Every. Single. Time. for the past 30 years.

Menu

This year was the same on his end....however, on my end, I made some changes.  You see, my husband recently had a stroke so I am doing my best to feed him a little healthier.

The Many Talents of John Legend #WinePW

When you think of John Legend you may think of his music, which is amazingly beautiful.  You may think of his role on The Voice where he playfully and charmingly banters with Blake Shelton.  You might think about his marriage to actress, Chrissy Tiegen, or maybe you remember that he was chosen by TIME magazine as one of the most influential people in 2017.

Pasta with Pork Braised in Red Wine with Tasca d'Almerita Lamuri Nero d'Avola 2018 #ItalianFWT

This slow simmered ragu starts with pork stew that braises in red wine and pureed tomatoes on the stove top until the pork starts shredding when stirred.  I served it over orechiette so that those "little ears" caught every bit of the ragu. Paired with a lovely bottle of Nero d'Avola it made for a perfect Sunday Supper.

Lots of Family Time, Pork Fajitas and the Weekly Menu

We were blessed to have our second daughter, Nicole, over for lunch on Tuesday to celebrate her birthday.  Her birthday isn't until Sunday but she is the manager of a popular restaurant and since Michigan has been allowed to partially re-open, she is going to be busy.  We were pleased that she spent her only day off with us this past week.

woman with birthday cake

Since it was Taco Tuesday I cooked up some Pulled Pork Fajitas that I am sharing with you today.  They were delicious.  The fresh mango topping was a breath of the tropics in February.  We normally are on a dive trip during February so I am craving and cooking foods that take me away.......
