Chicken Nuggets in the Air Fryer #MultiCookerMonday

Golden Brown and Perfectly Crisp these little nuggets of chicken made in the air fryer are perfect for a family meal, game day snack, or packed in the kids lunch box.

You can make these tasty little bites for your family, knowing exactly what ingredients they contain and with no deep frying in less than half an hour.  You can also bread and freeze them to cook at a later time, just like those packages you buy at the store......

You will notice that the recipe for Bacon Wrapped Scallops in the Air Fryer belongs to Karen of Karen's Kitchen Stories.  Well.....so does mine.  I adapted a recipe from Karen's blog for these chicken nuggets.  When Karen made them she featured two dipping sauces, one of which she made using a citrus jelly made by our son, Tony.

I didn't make any sauces for mine.  I used store bought ranch dressing and passed around fresh veggies to accompany the nuggets and also to be dipped. I did, however, use Karen's technique for browning the panko crumbs in the microwave.  The woman is a genius!!!

I have never gotten the crisp wonderful results in my air fryer that I acheived with these chicken nuggets.  I will be using this technique for all my air fryer breading in the future.

Chicken Nuggets in the Air Fryer

Golden Brown and Perfectly Crisp these little nuggets of chicken made in the air fryer are perfect for a family meal, game day snack, or packed in the kids lunch box.

Ingredients

  • 1 lb.  boneless, skinless chicken breasts 
  • 1 1/2 T. sugar
  • 1 qt. water
  • 1 1/2 c. panko bread crumbs
  • 2 T. olive oil
  • 2 eggs
  • 1 1/2 T. flour
  • salt and pepper, to taste
  • 1/2 T. onion powder
  • 1/2 T. garlic powder

Instructions

  1. Cut the chicken into chunks, you should get about 18 pieces.
  2. Dissolve the the sugar in the water.  Add the chicken chunks and let marinate for 15 minutes.
  3. Meanwhile, combine the panko and olive oil in a microwave safe bowl.  Microwave for 5 minutes, stopping and stirring every minute, until the crumbs are golden brown.
  4. Whisk together the eggs, flour, onion powder, garlic powder, salt and pepper in a shallow bowl.
  5. Preheat the airfryer to 400*.  
  6. Remove the chicken from the brine and pat dry with paper towels.  Dredge in the egg mixture and then in the panko crumbs.  Place onto the rack of the air fryer and cook for about 10 minutes, until an internal temperature of 160* is reached.

  5. These look so delicious! Even if my picky kiddo turned these down, they'd still disappear in no time, sometimes you just want crunchy comfort food.
