Chicken and Ramen Noodle Dump Casserole #SundaySupper

Life doesn't get much easier than meals where you open packages, shred leftover chicken and dump them all into a casserole.  In this case it doesn't get much more delicious either!!

We eat a lot of chicken here.  I like to roast a chicken for dinner one night, use the leftovers for another dinner or two and use the carcass to create chicken stock.

Let's take a look at the recipes being shared today.......



Chicken and Ramen Noodle Dump Casserole

Pre packaged Ramen Noodles sans most of the flavor packets, Shallot and Chive Boursin Cheese, Milk, Leftover Chicken, Frozen Vegetables and Shredded Cheese are dumped into a 9x13" pan and put into the oven to bake.  In less than an hour you are enjoying a healthy and tasty dinner.

Sometimes, as in this past week, I don't have time to roast a chicken. When this happens you can always make a Whole Chicken in a Crockpot  or grab a Rotisserie Chicken from the grocer with the same results.

I'm still staying very busy with our Lenten Fish Fry that I run for our Parish.  I could never do this on my own and I am very grateful I have such a huge staff of volunteers.

During times like these I rely on quick and easy meals that are still deliciously satisfying.  This casserole is one of these kinds of meals as were these Chicken and Cheese Sheet Pan Nachos that I shared last week using the same chicken.

Ramen Noodle Dump Casserole

Life doesn't get much easier than meals where you open packages, shred leftover chicken and dump them all into a casserole. In this case it doesn't get much more delicious either!!

Ingredients

  • 3 (3 oz) pkgs.  Chicken Flavored Ramen Noodle Packets
  • 1 (5 oz) pkg. Shallot and Chive Boursin Cheese
  • 2 c. milk
  • 1 c. shredded leftover cooked chicken
  • 1 (10 oz) pkg frozen vegetables of choice ( I used broccoli, cauliflower and carrot mixture)
  • 1/2 c. shredded Colby Jack Cheese

Instructions

  1. Open the Ramen Noodles and place the squares into the bottom of a 9x13" baking pan, breaking as needed to fit.   Discard 2 of the flavor packets.  Empty 1/2 of the remaining flavor packet into a bowl and discard the rest.
  2. Pour the milk into the bowl with the seasoning, add the boursin cheese and whisk to blend.  Pour over the noodles.
  3. Sprinkle the chicken and frozen vegetables over the top and then sprinkle the shredded cheese over all.
  4. Bake in a preheated 400* oven for half an hour.  Stir to combine before serving.

  1. I adore Boursin and everything it is used in! Casseroles are the best for easy delicious dinners!
    Your aside about the church fish fry reminded me that I should check with a nearby church next week and see if they are doing one again this year. It's been a favorite of ours in prior Lenten seasons.

    1. You should Stacy. Our first week we only had 214 meals sold because people weren't sure. This past Friday we were up to 319 so much less waste. We used to have a local food kitchen come for the leftovers but they couldn't this year due to COVID. We ended up packaging the tons of leftovers from that first week into individual packages, freezing it and offering it to our Food Pantry clients. They were very happy as well.

  2. Save those extra seasoning packets for soup. I love how economical ramen noodles are. I haven't made a casserole with them yet but I will now. Yours look lush.

  6. Your recipe sounds delicious! I don't have the boursin cheese, would powdered ranch dressing with cream cheese and dried chives work? I know it'd be different. Thank you!

    1. I think that would work just fine. The cream cheese may be a little thicker than the Boursin cheese so maybe a Tablespoon more milk, if needed.
