Muffin Pizzas #BakingBloggers

These little Muffin Pizzas are a great little bite to easily take care of your pizza craving. You can start with your favorite pizza dough or use store bought dough to save time.   Add the fillings of your choice, pop them in the oven and voila....lunch is served or add a salad and make it dinner.

Muffin Pizzas

I started out with all pre packaged ingredients for my Muffin Pizzas.  I rolled out the dough and used a biscuit cutter to make the rounds.  Put them into the wells and topped them with jarred pizza sauce.

They were the perfect size for one pepperoni each.  Then I topped then with some shredded mozzarella cheese and popped them into the oven.

Five minutes to put together, 10 minutes in the oven, 10 minutes to cool and you are eating these perfect snack size pizzas in less than half an hour.

We enjoyed these for lunch one day and then the teen snacked on the leftovers during the evening.  I adapted this recipe from one found in Cuisine at home.  They cooked their dough first, filled it and then cooked it again.  Seemed like a lot of extra work to me so I skipped that part.

Muffin Pizzas

These little Muffin Pizzas are a great little bite to easily take care of your pizza craving. You can start with your favorite pizza dough or use store bought dough to save time. Add the fillings of your choice, pop them in the oven and voila....lunch is served or add a salad and make it dinner.

Ingredients

  • 1 container refrigerated pizza dough
  • 3/4 c. prepared pizza sauce
  • 12 pepperoni slices
  • 1 (8 oz) pkg. shredded Mozzarella cheese

Instructions

  1. Roll out the dough and using a biscuit cutter cut into 12 rounds, re rolling scraps as necessary.  Place each round into the bottom and partially up the sides of the wells in a 12 cup muffin tin that has been treated with cooking spray.
  2. Add a Tablespoon of sauce to each well.  Top each with a pepperoni.  Divide the cheese over the 12 muffins covering the tops.
  3. Bake in a preheated 450*oven for 10 minutes.  Remove from oven and let cool in the pan on a wire rack before removing from the tins and serving.

  7. Last week, I had a reader tell me that cheese like this was burnt. I'm glad that you and I are alike...it's not burnt...it's cooked perfectly. Cheese should be ooey gooey and browned and crispy on top!!! PERFECTION!
