Apple and Kohlrabi Slaw #HolidaySides

 This sweet and slightly spicy salad is a great addition to your Holiday Table.  The crunch of the sweet apples combined with the spicy bite of the kohlrabi wrapped up in a creamy dressing pairs wonderfully with roasted poultry.

This delicious salad is so quick and easy to make.  If you are not familiar with Kohlrabi, it is a root vegetable belonging to the cabbage family.  It contains a bit of spice that reminds me of horseradish.  The creamy dressing is what makes this salad so special. This slaw is sure to become a family holiday favorite.

This slaw is perfect with any entree you are serving for dinner.  It is also a wonderful addition to a brunch or as a side to your leftover turkey sandwich the day after Thanksgiving.  YUM.

Apple Kohlrabi Slaw

This sweet and slightly spicy salad is a great addition to your Holiday Table. The crunch of the sweet apples combined with the spicy bite of the kohlrabi wrapped up in a creamy dressing pairs wonderfully with roasted poultry.

Ingredients

  • 1 c. miracle whip or mayonnaise
  • 1 1/2 t. apple cider vinegar
  • 1 t. honey
  • salt and pepper, to taste
  • 2 small Kohlrabi, peeled and cut into matchsticks
  • 2 apples, cored and thinly sliced
  • 2 scallions, white and light green sections, thinly sliced

Instructions

  1. Whisk together the  miracle whip, vinegar, honey, salt and pepper.  Add the Kohlrabi, Apple and Scallion.  Toss to coat.  Serve immediately or refrigerate until ready to serve.
