Almond Shortbread Bites #ChristmasCookies

Almond Shortbread Bites

These buttery little bites are baked up quickly in a 9x13" baking pan and then trimmed and cut into little squares that can be popped into the mouth.  My kids and granddaughters favorite part about these cookies are that they get to eat all the edges that have been trimmed.

I like that aspect of them too.  It's a win/win.  They get to snack on the ends and I get to put the little bites into a freezer container and save them to bring out during the holidays.  These cookies, of course, are wonderful any time of the year.  You can change the sprinkles for the season or you can omit the sprinkles completely.

Almond Shortbread Bites

Almond Shortbread Bites

These tender little shortbread bites are flavored with almond extract and made festive with the addition of red and green sprinkles.
Prep time: 5 MinCook time: 25 Mininactive time: 30 MinTotal time: 1 Hour

Ingredients

  • 2 sticks cold butter, cut into tablespoon portions
  • 2/3  c. sugar
  • 1/2 t. almond extract ( I used Adams)
  • 2 1/4 c. flour
  • 2 T. sprinkles, if desired

Instructions

  1. Cream together the butter and sugar in the large bowl of a stand mixer.  Stir in the almond extract.  Turn the speed to low and gradually add the flour until incorporated, increase speed and mix until a dough is formed.  Reduce speed and stir in the sprinkles.
  2. Line a 9x13" baking pan with parchment paper with enough extra to be able to pick up the dough once baked.  Press the dough into the bottom of the pan to make an even layer. Place in the refrigerator for half an hour.
  3. Bake in a preheated 350* oven for 20-25 minutes, until edges are golden brown.  Remove from oven.  Lift the cookie dough out using the parchment and place onto a cutting board.  Using a sharp knife or bench knife, trim the edges off and set aside.  Cut the remaining cookie dough into small squares while still warm and then allow to cool before placing into an airtight container.
