Lemon just seems to shout Spring to me. I don't know about you but I love lemon desserts. Something about that sweet/tart mixture is irresistible. I adapted this recipe from this one found at Go Bold with Butter.
I served them up at a dinner party I had with friends last Friday night. They were the perfect ending to a wonderful gathering. I used sponsor, Dixie Crystals, sugar in these bars. I opted not to receive the sugar they were gifting for this event because they are always so very generous that I still had plenty from the last event they sponsored for us. Lemon Cookie Bars

Just the right amount of sweet and tart, these lemon cookie bars are sure to be a hit at all your Spring gatherings.
ingredients:
Bars:
- 1 stick + 2 T. butter, room temperature
- 1 c. sugar
- zest and juice of 1 lemon
- 2 eggs + 1 egg yolk (I used duck eggs)
- 1 c. flour
- 1/2 t. salt
- 1/2 t. baking powder
Glaze:
- 3/4 c. powdered sugar
- 1 t. lemon zest
- 1-2 T. lemon juice
instructions:
Bars:
- In large bowl of stand mixer, fitted with paddle attachment, cream together the butter, sugar and lemon zest.
- Add the eggs and egg yolk, one at a time, beating well between each addition. Stir in the lemon juice.
- Add the flour, salt and baking soda to the bowl and, using low speed, incorporate until batter is smooth.
- Spread batter into an 8x8" baking pan that has been treated with baking spray.
- Bake in a preheated 350* oven for half an hour, until edges are browned. Remove to a wire rack and allow to cool completely.
- When cooled, remove from pan to a serving platter and top with glaze recipe below.
Glaze
- Whisk together the powdered sugar, lemon zest and enough lemon juice so that the glaze is thick but able to be poured. Pour over the top of the bars, using a knife to help spread to edges, if necessary. Let sit for half an hour before serving.
