Grilled Asparagus with Lemon Marinade #KitchenMatrixCookingProject

Time, once again, for the Kitchen Matrix Cooking Project.  A few of us get together every Tuesday and post a recipe inspired by the Cookbook written by Mark Bittman.  This month's recipes were chosen by Karen of Karen's Kitchen Stories .



This week she chose the section of the cookbook labeled Asparagus +12 Ways.  Bittman offers you 3 ideas each for making asparagus steamed, roasted, stir fried or grilled.  I was originally going to make a stir fry but the night I had it planned we ended up grabbing dinner out while running errands.

When Jessica brought her new beau over to meet us, I put steaks on the grill and decided to grill the asparagus to serve as a side.  Grilling asparagus is nothing new in this household.  In fact, we have prepared asparagus every way that Bittman suggests and I have served it raw as a salad.  Asparagus is my favorite veggie, bar none.

I have wrapped it in bacon and served it as an appetizer, pureed it and turned it into a creamy soup shaved it for a salad, combined them with shrimp to make savory crepes, added them to eggs benedict, turned them into a tart, and added them to pasta for a meatless entrĂ©e.  I have coated them with a cucumber vinaigrette, taken a recipe from our host Karen and grilled them with lemon and mint, served them roasted  in the winter months, and pickled it.

Normally when I grill asparagus, other than the recipe of Karen's that I'm sharing, I just toss it with olive oil, salt and pepper and throw it on the grill.   Bittman recommended using a lemon marinade simply made by combining lemon to the olive oil.  I decided to use butter instead.


The asparagus was tender, smoky and delicious with the richness of butter and the zing of lemon to brighten and lighten it up.

Grilled Asparagus with Lemon Butter

Tender spears of Asparagus, basted with butter and lemon and grilled to perfection makes the perfect summer side dish.

ingredients:

1 bunch asparagus, tough ends snapped off
2 T. butter
juice of 1/2 small lemon


instructions

Place the asparagus onto a grill pan.  Melt the butter and add the lemon juice.  Grill the asparagus over med high heat (if using a gas grill) , brushing with the butter and lemon and turning occasionally until tender, 8-10 minutes.  Remove from grill, brush with the last of the butter, season with salt and pepper and serve.

  1. That looks delicious. I couldn't talk Jake into starting up the grill just for my asparagus, but I'll try this soon. Really soon. The lemon butter sounds fantastic.

  2. Lemon butter on grilled asparagus sounds amazing. You are definitely the asparagus master. Too bad all of the Michigan asparagus came right before your vacation!

  3. Asparagus is one of my favorite veggies too. Is Jessica and Ting the same person?? I think I'm missing something here. LOL

    1. Yes, she chose an American name when she entered into the work field. I have had a hard time transitioning but am working on it. When she becomes a citizen (allowed to apply after having her green card for 5 years) she will legally change her name.

  4. I'm seeing asparagus go on sale here lately. Must get some and try it with a bit of lemon. Looks crisp and delish.

    The very next time I read a blog, I hope that it does not disappoint me as much as this particular one.New Year Text Messages I mean, I know it was my choice to read, but I truly thought you would probably have something useful to say. All I hear is a bunch of crying about something that you could possibly fix if you were not too busy searching for attention.
