I made a Strawberry Puree with some strawberries that were no longer beautiful but still perfectly ripe and delicious. This puree works well in smoothies or stirred into yogurt for a quick breakfast treat.
This puree can be made in minutes. The quantity is up to you. The recipe makes 2 servings. I swirled half into my yogurt and put the rest in the refrigerator. The next day it was added to a smoothie for a quick, take with breakfast treat.
It is a great way to use up those strawberries before they turn on you. Make sure you trim off the tops and any spots that are not perfect. Put them into a food processor or blender with a little syrup or honey and some lemon juice and puree. Easy, peasy, delicious and a great way to use leftover produce. This recipe works just as well with any berries or a mixture of berries too.

Ingredients
- 10-12 strawberries, tops removed
- 1 T. maple syrup or honey
- juice of 1/4 lemon
- 1 1/2 c. Plain or Vanilla yogurt
Instructions
- Place the strawberries, sweetener of choice, and lemon juice into the bowl of a food processor or blender. Puree until smooth.
- Divide the yogurt into two bowls. Dollop half of the puree over each and swirl with a knife.
