Apple Cranberry Pie, A Book Review and the Weekly Menu including Christmas #LitHappens

Apples, Cranberries, and Streusel Topping....This may be the perfect Christmas Pie.

Amy of Amy's Cooking Adventures invited us to join her in reading (or rereading in my case) Charles Dicken's A Christmas Carol for our Lit Happens Book Club.

This is my well-worn and much-read copy of A Charles Dicken's Christmas.  It contains A Christmas Carol, The Chimes, and The Cricket on the Hearth.  I received it as a Christmas Gift in 1976 from my Mother-in-law, Lil.  We shared a love of reading and I have treasured this book as I have her memory.

Lil passed away during the Christmas season 5 years later.  This was the first loss I had of someone that I loved.  She was an amazing lady and a wonderful grandma to my two eldest children.  Each year this book is packed away with my Christmas decorations to be read again the following year.  When the kids were young I would read this story to them.

We all know the story of Scrooge and the lessons he was taught by the Ghosts of Christmas Past, Present, and Yet to Come.  It is a classic, timeless story that is just as pertinent now as when it was written in the 1800's.

While Lit Happens is not a Foodie Book Club, I tend to find inspiration and share recipes with the group anyway.  So this year I read the book with my foodie glasses on.  Had you asked me before this reading what foods were in this story, I would have replied gruel and goose.

There is a TON of food in this story.  Especially when the Ghost of Christmas Present arrives on the scene with tables laden with food of every description.  When I made this pie for a dinner party I was having, it reminded me of Christmas and the importance of family, friends, and community.  I thought I would share it with you today.

It is hard to believe that Christmas is only a few days away.  Tonight we are going out to dinner with the Bonacorsis and Luths followed by a Carriage Ride through Port Huron, a neighboring city, looking at Christmas decorations.  Tomorrow our choir is attending a Christmas Concert and some of us will grab dinner together afterward.

Christmas Eve will be spent with Frank's family at his brother's house and then we will celebrate Christmas Day here with most of our immediate family.  The day after Christmas we are going to see the stage play A Beautiful Noise.  We will be going for dinner before the show.  Friday we are recuperating!!!

Apple Cranberry Pie with Streusel Topping

Apples, Cranberries, and Streusel Topping....This may be the perfect Christmas Pie.

Ingredients

  • 1 Pie Crust
  • 6 c. of Apples, cored, peeled and sliced
  • 1 c. fresh cranberries
  • 1/2 c. sugar
  • 1 t. cinnamon
  • 3/4 c. flour
  • 1/3 c. sugar
  • 6 T. butter, cut into tablespoon portions

Instructions

  1. Prepare a pie crust for a one crust pie and place into a pie pan. Toss the apples and cranberries with the 1/2 cup of sugar and the cinnamon. Pour into the crust.
  2. Place the cold butter, flour and 1/3 cup of sugar into a food processor and pulse several times until crumbly.
  3. Spread over the fruit in the pie shell and bake in a preheated 400* oven for 35-40 minutes, until fruit is tender and streusel is lightly browned.
