Pumpkin Apple Muffins #MuffinMonday

It's Fall Y'all....that means it is pumpkin season.  It also means it is apple season.  I have combined the two seasonal favorites into one delicious muffin.

Pumpkin Apple Muffins

These delicious, seasonal muffins are sure to be a big hit with your family and friends this fall.  Flavorful pumpkin, tart apples, and warm spices combine to give you all the warm feelings of the holidays.

Pumpkin Apple Muffins

It's Fall Y'all....that means it is pumpkin season. It also means it is apple season. I have combined the two seasonal favorites into one delicious muffin.

Ingredients

  • 2 1/2 c. flour
  • 1 c. sugar
  • 1 c. dark brown sugar
  • 1 T. pumpkin pie spice
  • 1 t. baking soda
  • pinch of salt
  • 2 eggs
  • 1 c. pumpkin puree
  • 1/2 c. canola oil
  • 2 T. milk
  • 1 large, tart apple, peeled and diced (I used Granny Smith)

Instructions

  1. Combine the flour, sugar, brown sugar, pumpkin pie spice, soda, and salt in a large bowl. Form a well in the center and set aside.
  2. Whisk together the eggs, pumpkin puree, oil, and milk. Pour into the well of dry ingredients and mix just until combined.
  3. Fold in the diced apple and divide between 16 standard muffin cups. Bake in a preheated 350* oven for about half an hour, until a skewer inserted removes cleanly.

  5. Pumpkins are back here (they disappeared after the hurricane) so it's time for me to do some pumpkin baking. These look delicious.
