I don't know about you, but in this family we serve a traditional Thanksgiving Dinner that includes Roast Turkey and Stuffing. I can get a little more creative with the other Holidays but on Thanksgiving my creativity is limited to the side dishes that I offer. That is one of the reasons I look forward to this event so much each year. Because after, 40+ years of cooking Thanksgiving dinner, I tend to run out of ideas.

It doesn't get much easier than this recipe. Prep the beans ahead of time so that they are ready to be charred right before serving. It only takes minutes and can be completed while the others in the family are taking your feast to the table. If that makes you nervous they can be cooked earlier and placed into a warm oven until time to serve. This side dish is vegan and keto so all your guests can enjoy it.

Charred String Beans
This quick and easy side dish is perfect to serve with whatever you have on your holiday table. I used a mixture of green and yellow beans for color but you can use all green beans if you like.
Prep time: 5 MinCook time: 6 MinTotal time: 11 Min
Ingredients
- 2-3 lbs. string beans, ends removed, snapped in half if large.
- 2 T. olive oil
- salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet or wok over med-high heat. Add the beans in a single layer (work in batches, if needed), season with salt and pepper, and let cook undisturbed for a couple of minutes.
- Stir the beans and continue to cook, stirring occasionally for another 3 or 4 minutes, until the beans are tender and charred in spots.
