Sloppy Joe Cups #SundayFunday

I served these up with seasonal vegetables fresh from my neighbor's garden.  It was a perfect, easy dinner that we all enjoyed.

Sloppy Joe Cups

Sloppy Joe Cups

This easy dinner starts with a crescent sheet from the dairy section of your grocer, placed into a muffin tin, filled with sloppy joe mixture, and topped with cheese.

Ingredients

  • 1 lb. ground beef
  • 1/2 Vidalia onion, chopped
  • 2 cloves garlic, minced
  • 1/4 c. ketchup
  • dash of hot sauce
  • 1 T. brown sugar
  • 1/4 c. Worcestershire sauce
  • 1 can chicken gumbo soup
  • 1 pkg refrigerated crescent sheet
  • 1/2 c. shredded Colby Jack cheese

Instructions

  1. In a large skillet, over med-high heat cook the ground beef with the onion and garlic, until browned and crumbly. Drain any liquid from the pan.
  2. Return the drained pan to the stovetop and stir in the ketchup, hot sauce, brown sugar, and Worcestershire sauce until beef is coated. Stir in the soup. Bring to a boil, reduce heat, and simmer for about 15 minutes until thickened. Remove from heat and allow to cool slightly.
  3. While sloppy joes are cooling open the refrigerated crescent sheet and lay the dough onto a flat surface. Cut the dough in half vertically and then crosswise in equal portions, making 8 pieces.
  4. Press each piece of dough into the bottom and up the sides of 8 muffin cups that have been treated with cooking spray.
  5. Place 1/4 cup of sloppy joe into each muffin cup. Sprinkle each with 1 Tablespoon of cheese and bake in a preheated 375* oven for 20 minutes.
