These super simple Drop Biscuits are perfect for breakfast with some Sausage Gravy, split open for lunch and filled with Virginia Brand Ham or as a side dish to a Virginia Brunswick Stew.

Debra of Eliot's Eats is hosting this month and chose the latest book by Jeanette Walls, Hang the Moon, set in Virginia. This covers the Mid-Atlantic and Appalachian areas of the Country.
I had previously read Jeanette Walls' memoirs of her childhood in The Glass Castle and Half Broke Horses many years ago before I started this blog. I enjoyed them both so I was happy when Debra chose a fiction novel by this author.
Let me start out by saying I LOVED this novel. I loved Sallie most of all but I certainly loved the other characters in this book as well. Sallie's father is called The Duke and reigns supreme in the little town in which they live. Sallie is the apple of her father's eye and the only parent she knows as her mother died during a violent argument with The Duke.
The Kincaids however are very traditional and The Duke needs a son to carry on the family business. He marries again nearly immediately after the death of Sallie's mother and this union gives him the son he longed for but unfortunately not the son he wanted.
Whereas Sallie is pure Kincaid, smart, witty, tenacious and resourceful, her brother Eddie is more his mother's child, extremely smart but timid, fearful, and sickly. Sallie attempts to bring out the Kincaid in Eddie, hoping to please her father, by taking him on an adventurous, fast, and exciting coaster ride. Eddie falls out of the wagon and is knocked unconscious causing Sallie to be exiled to the Mountains of Virginia to live with her Aunt Faye.
Nine years later, when Eddie's mother passes, Sallie returns ready to take her rightful place in the household. Her father charges her with the care of Eddie, a sullen, forlorn teenager who is lost without his mother. Eddie knows what a disappointment he is to his father and falls into a depression refusing to eat anything other than biscuits.
I don't want to give away any spoilers but I daresay that you will love Sallie as much as I and you will be rooting for her from the first page on.

I was inspired into the kitchen and made these easy, wonderful, fluffy, and flaky drop biscuits I am sharing with you today. They are super simple and result in a soft interior surrounded by a crisp, chewy exterior. They are hard to resist, even if you are on a hunger strike.
Super Simple Drop Biscuits
Ingredients
- 2 c. flour
- 1 T. baking powder
- large pinch of kosher salt
- 1 stick butter, cut into 8 pieces
- 1 c. milk
Instructions
- Place the flour, baking powder and salt into the bowl of a food processor. Pulse once to mix.
- Add the butter pieces and pulse 3-4 times until butter is cut in. Remove to a bowl.
- Stir in the milk, just until incorporated. The batter will be thick and lumpy.
- Spoon into a cast iron skillet in 6 equal portions. Bake in a preheated 450* oven for 20 minutes, until golden brown.
