Apple Pie Cookies

After reading our Cook the Books Club October/November Selection, The City Baker's Guide to Country Living, I was inspired to make these cookies.

The City Bakers Guide to Country Living

Cook the Books is a bimonthly book club in which we are all given 2 months to read the current selection and blog or instagram a recipe inspired by the book.  This current selection is in effect until the end of November so you have plenty of time to join in the fun.  Learn how in the Guidelines Post.  

This month's selection was chosen by Claudia of Honey From Rock.  It is a fun easy read, perfect for picking up on a quiet weekend as it only takes a day or two to read.  

This novel follows Olivia, a pastry chef in a high-stress job and a dead-end relationship.  When her flambeed dessert results in a fire at the Country Club where she works, she flees to her best friend, Hannah, who lives in a small rural town in Vermont.

Olivia is offered a position as a pastry chef for a quaint little inn owned by a cantankerous, elderly Margaret, whose only interview for the position is to have Olivia (Livvy) bake an apple pie. 

There is, of course, a wonderful cast of characters and the mystery of why Margaret is so miserable but still so well-loved by all who know her.  Well, not all.  Of course, there is her arch nemesis who creates havoc for Margaret and Livvy.  

During the holidays, Livvy bakes tray after tray of cookies each weekend as the kids gather to see Santa and decorate gingerbread men and houses.  Livvy finds that she is enjoying being part of a small community and decides that country living beats city dwelling.

I decided to make an apple pie in "cookie form"  Each little pie is the size of a cookie, perfect for packing into a lunch box or enjoying as an afternoon snack.



Heather of Based on a True Story, hosts a group called Foodies Read.  Regular readers of this blog are very familiar with Foodies Read as I link up to it several times a month. 

Heather decided to try a new theme for our group by making a Bingo board for us to fill out.  I have been having fun with this challenge. To date, I have shared the following recipes and reviews:
This book fit the categories of Starring a Chef, Linked Up to Foodies Read, and Fruit on the Cover.  I decided to go with Fruit on the Cover based on the apple trees and apples in the back of the pickup on the cover of this fun, food-centric novel.

I actually read this novel when it first was published in 2018.  I thought it was familiar when I was reading it this time, so searched my blog and found this review and recipe for a Double Crust Deep Dish Apple Pie that I adapted from a recipe written by the author.

This past week was crazy busy and tonight we are going on a dinner date and then a musical tribute to Carole King.  Next week is pretty quiet so we can recoup before we leave for Vegas on Halloween.  We are having friends over for dinner Sunday.

Apple Pie Cookies

Apple Pie Cookies

All the goodness of apple pie baked into small cookie form so you can enjoy them anytime.

Ingredients

  • 3 T. butter
  • 2 Granny Smith apples, peeled, cored and diced
  • 1/2 c. packed brown sugar
  • 1/4 t. cinnamon
  • juice of 1/2 lemon
  • 2 T. apple juice
  • 1 T. cornstarch
  • pie dough for a 2 crust pie, store-bought or this recipe
  • 1 egg
  • 1 t. water

Instructions

  1. Melt the butter in a skillet over medium-high heat. Add the apples and cook for a few minutes until they start to soften.
  2. Stir in the brown sugar, lemon juice, and cinnamon. Bring to a boil and cook for another few minutes until the apples are completely soft and the liquid has reduced a bit.
  3. Combine the apple juice and cornstarch, add it to the apples in the skillet and cook for another minute or so, until thickened. Remove from heat and let cool completely.
  4. Roll out the pie dough and use a 3" cookie cutter to cut out 36 rounds. Place 18 of the rounds onto cookie sheets that have been lined with parchment or silicone mats.
  5. Place about a Tablespoon of the cooled filling onto each of the rounds and top with one of the remaining rounds of dough. Use a fork to crimp and seal the edges and poke vent holes into the tops
  6. Whisk together the egg with water and brush onto the top of each cookie.
  7. Bake in a preheated 375* oven for about 20 minutes, until golden brown and bubbly.
