I decided to go with the sourdough option. I am always looking for ways to use my sourdough discard. I was raised to not waste kitchen ingredients and, though I do sometimes force myself to throw away the sourdough discard, I am always happy if I can use it.
This recipe makes a very wet dough, you spread half into your loaf pan and sprinkle on half of the apples and cinnamon, cover with the remaining dough, sprinkle on the remaining cinnamon apples and top it with a streusel.
You could add a glaze made of powdered sugar and apple cider if you want to serve this up as dessert. I prefer it with a slather of butter and a cup of coffee for breakfast.

Apple Fritter Bread
This scrumptious loaf starts with sourdough discard and incorporates apples and cinnamon so you feel as if you are biting into an Apple Fritter without the mess or calories from frying.

Ingredients
- 1 2/3 c. flour
- 1/4 c. + 3 T. brown sugar, divided
- 1/4 c. + 1 T. sugar, divided
- 1 T. baking powder
- large pinch of salt
- 1 c. sourdough discard
- 2 eggs
- 1/2 t. vanilla
- 10 T. butter, divided
- 2 T. milk
- 1 large apple, I used Honeycrisp, peeled and cut into 1/2" dice
- 1 t. cinnamon
Instructions
- Melt 8 Tablespoons of the butter. Remove from heat and set aside to come to room temperature.
- Whisk together the flour, 1/4 cup of brown sugar, 1/4 cup of sugar, baking powder, and salt. Set aside.
- Whisk together the sourdough discard, eggs, milk vanilla, and melted butter. Add to the dry ingredients and stir just until completely combined. Cover and let rest for an hour.
- Combine the diced apple, remaining Tablespoon of sugar, and cinnamon. Set aside.
- Combine 2 Tablespoons of room temperature butter with the 3 Tablespoons of brown sugar. Set aside.
- Spray a loaf pan with baking spray and then line with parchment allowing the parchment to hang over the sides of the pan.
- Spread half of the bread dough into the prepared pan, and sprinkle with half of the apple mixture. Top with the remaining dough, sprinkle with the remaining apples, and then with the brown sugar/butter mixture.
- Bake in a preheated 350* oven for about an hour, check for doneness by inserting a skewer in the center of the loaf, if it removes cleanly remove the bread from the oven to a cooling rack. Otherwise, continue to bake in 5-minute increments until the bread is completely cooked.
- Let cool in pan for 15 minutes before using the parchment to lift it out of the pan.
