Pineapple Rice Salad
Royal Blend Rice Mixture tossed cooked in water flavored with pineapple juice and then tossed with pineapple tidbits. A perfect Island Style side dish.

Ingredients
- 1 c. Royal Rice Blend
- 1 (15 oz) can pineapple tidbits, drained, liquid reserved
- water
- pinch of salt
- 1 T. butter
- Juice of 1 lime
- 1 T. olive oil
Instructions
- Add water to reserved pineapple juice to equal 2 cups. Place into a large pot over high heat.
- Stir in the rice, butter and salt. Bring to a boil, reduce heat to a simmer, cover and cook until water is absorbed, about 25-30 minutes.
- Remove from heat and fluff with a fork and place into a bowl to cool to room temperature.
- Add the pineapple tidbits, lime juice and olive oil. Toss to combine and coat and serve.
