Cajun Rockfish Pin

This recipe is actually 3 recipes combined into one delicious dish.  The Cajun butter starts with homemade Cajun seasoning.  You will have more seasoning than you need but it stores well and can be used for many things, including the seasoning for the sweet potato fries that I served with this fish.

The seasoning is used to flavor the butter to which you add garlic, onions and tomatoes before dressing  the rockfish to go into the oven.

The results are delicious.  This sauce can be use on any mild white fish but I am lucky enough to be the recipient of Alaskan Rockfish, caught by a friend and flash frozen for shipment home.  He caught a LOT of Rockfish and MahiMahi and he generously gifted some of it to me.

Baked Rockfish with Cajun Garlic Butter Sauce

This tender flaky white fish is made even more delicious with the addition of tomatoes and onions cooked in Cajun Garlic Butter Sauce.

Ingredients

Cajun Seasoning
  • 3 T. smoked paprika
  • 1 T. onion powder
  • 1 T. garlic powder
  • 2 t. kosher salt
  • 1 t. white pepper
  • 1 t. ground mustard
  • 1 t. oregano
  • 1 t. thyme
  • 1/2 t. cayenne pepper
  • 1/2 t. dried basil
Rockfish in Cajun Garlic Butter
  • 1 stick butter, divided
  • 4 cloves garlic,minced
  • juice of 1/2 a lemon
  • 2 T. Cajun Seasoning (recipe included)
  • 8 pieces Rockfish fillet, 4-6 oz. each
  • 1/2 Vidalia Onion, sliced
  • 2-3 Compari tomatoes, seeded and diced

Instructions

Homemade Cajun Seasoning
  1. Combine all the spices into a mason jar. Seal and shake until combined. Store in a cool, dark area with your other spices.
Baked Rockfish with Garlic Butter Sauce
  1. Melt 2 T. of the butter in a sauce pan over low heat. Add the garlic and cook for a minute or two, until fragrant.
  2. Add the remaining butter, lemon juice and cajun seasoning to the pan. Stir in the onions and tomatoes.  Cook and stir for about 5 minutes, until butter is melted, onions are softened and spices are combined.
  3. Place the fish onto a foil-lined baking pan. Spoon the sauce over the top of each fillet and bake in a preheated 375* oven for 15-20 minutes, until fish flakes easily with a fork.

  1. Lucky you to be the recipient of the rockfish! I have a cousin who goes fishing in Alaska every year and brings it back. I am usually hanging around hinting for him to share.... Love this recipe. I'm sure it would be great with cod or halibut too.

  4. Trying out your recipe now, but I couldn’t find where it says to add the tomatoes or when . I think I will chop them and put them on minutes before cooking
