This recipe is actually 3 recipes combined into one delicious dish. The Cajun butter starts with homemade Cajun seasoning. You will have more seasoning than you need but it stores well and can be used for many things, including the seasoning for the sweet potato fries that I served with this fish.
The seasoning is used to flavor the butter to which you add garlic, onions and tomatoes before dressing the rockfish to go into the oven.
The results are delicious. This sauce can be use on any mild white fish but I am lucky enough to be the recipient of Alaskan Rockfish, caught by a friend and flash frozen for shipment home. He caught a LOT of Rockfish and MahiMahi and he generously gifted some of it to me.

Lucky you to be the recipient of the rockfish! I have a cousin who goes fishing in Alaska every year and brings it back. I am usually hanging around hinting for him to share.... Love this recipe. I'm sure it would be great with cod or halibut too.
ReplyDeleteIt sure would but Rockfish is my new love. I am very happy to have been blessed with it.
DeleteYou had me at Cajun and butter! So good!

DeleteIt sure was Stacy.
Yumm, never thought of cajun butter Wendy. I've got some seasoning left and already dreaming of mushrooms sauteed in cajun butter.
ReplyDeleteThat sounds perfect.
DeleteYummy! This looks amazing!
ReplyDeleteSo good Sneha
DeleteTrying out your recipe now, but I couldn’t find where it says to add the tomatoes or when . I think I will chop them and put them on minutes before cooking
ReplyDeleteThank you for catching this. You add the tomatoes along with the onion. I have amended the recipe. I hope your fish turned out lovely.
