This is one of the salads I made as part of our Easter Buffet. It accompanied the ham and lamb and was equally as good with both.
I adapted this recipe from one found at Curious Cuisiniere ran by Caroline who has gathered together a team of several bloggers who post recipes from all around the world.

Kachumbari (Tomato, Onion and Avocado Salad)
This African Salad from the Repulic of the Congo is a wonderful addition to any meal that you are serving. A mixture of red onions, tomatoes and avocados dressed simply in fresh lime and flavored with fresh cilantro.

Ingredients
- 1/2 large red onion, diced
- large pinch of salt
- 8 Compari Tomatoes, diced
- 1 jalapeno, seeded and minced
- 2 avocados, pitted and diced
- Juice of 1 lime
- handful of fresh cilantro leaves, chopped
Instructions
- Place the diced onion in a bowl, sprinkle with salt and cover with water. Set aside while for about 10 minutes while you prepare the other vegetables.
- Drain the onions and mix together with the tomato and jalapeno.
- Gently toss the avocado with the lime juice and then add to the tomatoes along with the cilantro.
- Toss gently to combine and serve.
