Red Velvet Pancakes inspired by 500 Days of Summer #MoviesandMunchies

These gorgeous red velvet pancakes are a great start to a wonderful Valentine's Day.  They couldn't be any easier, starting with a boxed cake mix and topped with a cream cheese sauce they are a delicious sweet treat to show your love.

I was inspired to make pancakes after watching 500 Days of Summer for our Movies and Munchies group.  The Red Velvet Pancakes were chosen because Valentine's Day is right around the corner......
Amy of Amy's Cooking Adventures is hosting Movies and Munchies this month and chose a Rom/Com in honor of Valentine's Day.

500 Days of Summer

I had never heard of this movie prior to this event.  This movie came out in 2009 and is available on HULU and Amazon Prime.  It follows Tom (Joseph Gordon Levitt) as he reflects on 500 Days of dating Summer (Zooey Deschanel) after she unexpectedly breaks up with him.

At the very beginning of the movie, Summer is eating pancakes and sausage.  That is the only food I saw during this film.  It's a good thing that there are so many different types of pancakes out there.

The movie was a pleasant way to spend a couple of hours on a rainy afternoon.  I can't say that I will ever have a yearning to watch it again but I'm not sorry it was chosen for Valentine's month and am happy to participate with Amy in this event.

I'm also happy to share another pancake recipe with you.  We love pancakes around here and I hope to get some new recipes from this event.

Red Velvet Pancakes

Red Velvet Pancakes

These gorgeous red velvet pancakes are a great start to a wonderful Valentine's Day. They couldn't be any easier, starting with a boxed cake mix and topped with a cream cheese sauce they are a delicious sweet treat to show your love.

Ingredients

  • 2 c. red velvet boxed cake mix
  • 1/2 c. flour
  • 1 egg
  • 1 1/4 c. milk
  • butter for the pan or griddle
  • 4 oz. cream cheese, room temperature
  • 1/4 c. powdered sugar
  • 1 t. vanilla
  • 2 T + 1t. milk

Instructions

  1. Whisk together the cake mix, flour, egg and milk until smooth. Let stand for 20 minutes while you preheat a skillet over med heat or a griddle to 350*.
  2. Coat the griddle or skillet with butter and cook the pancakes in batches, using approximately 1/4 cup batter per each pancake and cooking for about 4 minutes until the edges are starting to dry. Flip and cook for another 3-4 minutes before plating and keeping warm while you finish cooking the remainder of the pancakes.
  3. While pancakes are cooking place the cream cheese, powdered sugar, vanilla and milk in the small bowl of a stand mixer fitted with the whisk attachment. Mix on low until combined and then increase speed and continue to mix until smooth and pourable.
  4. Serve pancakes with cream cheese sauce.
