So I was pretty pleased when reading an article in Taste of Home that mentioned that Elvis served up this Brown Sugar Glazed Salmon at his wedding for those not interested in Fried Chicken or Suckling Pig.
My husband, who is not a Salmon fan, loved the glaze on this dish and enjoyed the meal. My Angel Face, who loves Salmon, hated the glaze saying she only likes sweet food that is supposed to be sweet. Evidently Salmon is not one of those foods. She wiped the glaze off as best she could. Next time I will know to leave the glaze off of her piece.

Brown Sugar Glazed Salmon
This salmon takes only 10 minutes to roast and a few minutes to glaze putting a healthy, delicious dinner on the table in record time.

Ingredients
- 1 lb. Salmon fillet
- salt and pepper, to taste
- 3 T. brown sugar
- 4 t. Dijon mustard
- 1 T. soy sauce
- 1 t. rice vinegar
Instructions
- Cut salmon into 3 equal portions and place onto a baking sheet lined with aluminum foil. Season with salt and pepper and roast in a preheated 425* oven for 10 minutes.
- While salmon roasts, combine the sugar, mustard, soy sauce and vinegar in a small pan. Bring to a boil over med high heat. Remove from heat and set aside.
- When salmon is done roasting brush the glaze over the top and place under the broiler until glaze is set and the fish flakes easily with a fork, 1-2 minutes.

Awww. Just tell her it's teryaki, lol! I read that same Taste of Home article too. Next time I'm making salmon (which is often), I'm doing it this way.

DeleteThat glaze sounds wonderful, Wendy! I will be trying it as well as we love sweet and savory together. I'm glad to hear that Elvis allowed salmon for his wedding feast. Some articles I came across said he wouldn't allow fish to be cooked at Graceland because he didn't like the smell. The wedding reception must have been offsite. 🤣
