We had a very mild Fall up until 2 days ago and now, KABLAM, winter has arrived. But while that mild weather was here, I enjoyed daily walks and started thinking about how nice a bonfire would be. Then I started thinking about roasting marshmallow and making S'mores. I planned on doing exactly that last Sunday when the Angel Face was visiting. Unfortunately, we had a snow squall and hail while she was here.
So we made these cookie bars and settled for snuggling up in front of the fireplace watching YouTube videos as we enjoyed them. Not quite what we had hoped for BUT very nice, none the less.
Should you, like me, want to extend the fall feeling at least through Thanksgiving, then these cookie bars are the perfect solution. Happy Fall Y'all!!!

S'More Cookie Bars
Graham Cracker Shortbread Crust filled with 2 types of Chocolate and Dehydrated Marshmallows. Who says you need a Bonfire to enjoy S'Mores?
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 2 sticks butter, room temperature
- 1/4 c. sugar
- 1 1/2 cups flour
- 4 full size graham crackers
- 1/2 c. chocolate chunks
- 1/2 c. dehydrated mini marshmallows
- 1/4 c. mini chocolate chips
Instructions
- Pulse the graham crackers in a food processor until small crumbs are formed. Set aside.
- In the large bowl of a stand mixer, fitted with the paddle attachment, cream the butter and sugar until light and creamy
- With the speed on low, gradually add the flour and graham cracker crumbs until incorporated.
- Increase speed to high and beat for a minute or two. Then stir in the chocolate chunks, marshmallow bits and chocolate chips.
- Spread into an 8" square baking pan that has been treated with baking spray and bake in a preheated 325* oven for 25-30 minutes until golden brown.
- Let cool completely in pan on wire rack before cutting into bars and removing.
