This brown rice pilaf flavored with pecans, onions and spices is the perfect side dish for all your holiday meals. It is wonderful served with roasted poultry or meats. It is an amazing bed for your seafood. It is a filling side dish for any vegetarians in your group and can be made vegan by swapping out olive oil for the butter.

Unlike my Autumn Rice Pilaf that has pecan halves and chunks of apples and onions. This Rice dish uses finely ground pecans so that you get all the flavors without any change in texture.

Pecan Rice
Ingredients
- 2 c. brown rice
- 4 c. chicken or vegetable broth
- 4 T. butter
- 1 onion, finely chopped
- 1 c. finely chopped pecans
- handful of parsley leaves, minced
- 1/2 t. dried basil
- 1/2 t. dried ginger
- salt and pepper, to taste
Instructions
- Bring the broth to a boil in a large pot over high heat. Stir in the rice, reduce heat to low, cover and simmer for about 40 minutes, until all liquid is absorbed.
- Melt the butter in a saute pan over med high heat. Add the pecans,onions, parsley, basil, ginger, salt and pepper. Cook a few minutes until onions are tender then stir into the rice and serve.
