Caramel Apple Strudel #SundayFunday

Delicious, seasonal apples tossed with traditional apple pie seasonings and cooked to a delicious filling before being placed onto puffed pastry, drizzled with caramel sauce, wrapped into a packet and baked to a golden brown.  I served it up with a scoop of vanilla ice cream with caramel ribbon.

Caramel Apple Strudel

This is an easy and delicious Fall dessert starting with frozen puff pastry.  A word to the wise, I could have let mine bake for about another 10 minutes.  I have adapted the recipe to allow for that adjustment.

Caramel Apple Strudel

Delicious, seasonal apples tossed with traditional apple pie seasonings and cooked to a delicious filling before being placed onto puffed pastry, drizzled with caramel sauce, wrapped into a packet and baked to a golden brown. I served it up with a scoop of vanilla ice cream with caramel ribbon.

Ingredients

  • 5 apples, peeled, cored and diced (I used Honeycrisp)
  • 3/4 c. apple cider
  • 1/4 c. sugar
  • 1/2 t. cinnamon
  • 1/4 t. allspice
  • 1/4 t. cloves
  • 1 pkg. frozen puff pastry, you will need both sheets
  • caramel dessert topping
  • 1 egg
  • 1 T. water
  • Demera sugar
  • Ice cream for serving, if desired

Instructions

  1. Place the apples, cider, sugar, cinnamon, cloves and allspice into a large saucepan over med high heat. Bring to a boil, reduce heat to a simmer and cook until apples are tender, about 20 minutes. Set aside to cool.
  2. Remove pastry from freezer and allow to thaw while apples cool. When pastry is ready, place both onto a parchment sheet, with short end slightly overlapping. Roll into an approximate 16x12" rectangle.
  3. With the short side facing you, use a slotted spoon to remove the apples from the liquid and place onto the bottom of the pastry. leaving an inch border on the bottom and sides. Drizzle the apples with 1/4 cup of the caramel.
  4. Using the parchment paper to assist, roll the pastry up jelly roll style starting with the short end facing you. Pinch the seam and ends to close.
  5. Whisk together the egg and water and brush onto the pastry, sprinkle with the demera sugar and cut slices into the top of the strudel.
  6. Bake in a preheated 375* oven for 30-45 minutes, until golden brown.
  7. Serve warm with ice cream, if desired.
