Easy Chicken Soup with Drop Dumplings

The Festive Foodies are celebrating National Dumpling Day........
Karen of Karen's Kitchen Story is hosting this month.  Let's see what everyone brought to the party:

Foodie Extravaganza is where we celebrate obscure food holidays by cooking and baking together with the same ingredient or theme each month. Posting day is always the first Wednesday of each month. I wasn't sure that I was going to be able to participate this month.  I was planning on making Vereniki and didn't get it done before the kitchen was dismantled.

We still need to eat each day though and I have been using the side burner on my grill to do a lot of meals.  I decided to buy a rotisserie chicken and make some chicken soup.  Originally, I was going to add noodles but then, when the Vereniki didn't work out I decided to make some quick drop dumplings to add instead.

Ingredients

  • 1/2 Vidalia Onion, diced
  • 2 carrots, scraped and cut into uniform slices
  • 1 stalk celery, diced
  • Meat from one half of a Rostisserie chicken, skinned, diced or shredded
  • 6 cups chicken stock
  • salt and pepper to taste
  • 1 c. flour
  • 2 t. baking powder
  • pinch of salt

  2. Meanwhile, mix together the flour, baking powder, salt and milk until completely moistened. Set aside.
  3. When vegetables are tender, reduce heat to a gentle boil and stir in the chicken.
  4. Drop the flour mixture by spoonfuls onto the soup, cover and cook for 10-15 minutes, turning the dumplings over in the soup after 5 or 6 minutes.
