    Libyan Cheese Dip

    Libya is a North African country that is known mostly for it's abundance of oil reserves.  This has Libya one of the fastest growing countries with the highest per capita income in the area.

    One of the best known foods from Libya is Shakshuka.  I love shakshuka and make it quite often.  I have made it with Eggplant and I have made it with Beets.  While researching recipes for this event I found a Green Shakshuka that is now on my to make list so stay tuned for that.

    Then I came across this recipe for cheese dip and knew it would make a perfect appetizer to bring to a gathering I was attending in honor of my friend, Kirsten's, heavenly birthday.

    Libyan Cheese Dip

    This simple but delicious cheese dip is a wonderful addition to a charcuterie tray, cheese platter or just by itself as a snack or appetizer.

    Ingredients

    • 6 oz. crumbled feta cheese
    • 3 T. plain greek yogurt
    • juice of 1/2 lemon
    • 1 dill frond, stemmed
    • small handful parsley leaves
    • toasted pita crackers

    Instructions

    1. Place the cheese, yogurt, lemon, dill and parsley into a food processor and pulse until smooth.
    2. Serve with toasted pita crackers or include on charcuterie, cheese or vegetable trays.
