Gingerbread Cake #CakeSliceBakers

Seasonal and delicious this Gingerbread Cake was the perfect ending to a Friendsgiving Dinner.  Just the right amount of spice and more savory than sweet.  A dollop of whipped cream is all you need to dress this cake up for a stunning holiday dessert.

I can't begin to tell you how much I loved this cookbook.  I had a year's worth of cakes, a different recipe each month, and they were all delicious and easy to prepare.  As an added bonus they are all small batch, perfect, if like me you have absolutely no self control LOL.

This cake serves 9 and was dessert after a Friendsgiving Dinner of 8....leaving one piece for the Teen to enjoy as a late night snack.  Perfect!!!

Gingerbread Cake

Gingerbread Cake

Seasonal and delicious this Gingerbread Cake was the perfect ending to a Friendsgiving Dinner. Just the right amount of spice and more savory than sweet. A dollop of whipped cream is all you need to dress this cake up for a stunning holiday dessert.

Ingredients

  • 3/4 c. flour
  • 3/4 c. white whole wheat flour
  • 3 T. sugar
  • 3/4 t. baking soda
  • 1/2 t. salt
  • 1 1/4 t. ground ginger
  • 3/4 t. cinnamon
  • 1/8 t. ground cloves
  • 1/8 t. nutmeg
  • 6 T. butter, melted and cooled
  • 1/2 c. molasses
  • 3 T. water
  • 2/3 c. buttermilk
  • 1 egg

Instructions

  1. Combine the flours, sugar, baking soda, cinnamon, ginger, nutmeg, salt, and cloves in a large bowl.
  2. Whisk together the molasses and melted butter until smooth. Stir into the dry ingredients along with the water until incorporated. Whisk together the egg and buttermilk. Stir into the batter until combined and smooth.
  3. Pour into an 8" square baking pan that has been treated with baking spray. Bake in a preheated 350* oven for 25 minutes until a skewer inserted in the center removes cleanly.
  4. Let cool in pan until ready to serve.

  2. I love the idea of this as the dessert at Friendsgiving - all those wonderful holiday spices and a big dollop of whipped cream to top it off. Yum!

  5. Friendsgivings are the best! I love the idea of a slightly savory dessert to contrast with super sweet things oth the table like pecan pie. Sounds delicious!
