Garlicky Dinner Rolls

These delicious rolls, made using a stand mixer, require no kneading.  After they are mixed together and the dough is pulled away from the sides, simply cover and let set in a warm area until doubled in size.

Divide them into 8 equal balls and place them in a cast iron skillet for a second rise.  Brush them with some of the garlic butter and bake.  While still warm from the oven brush with remaining garlic butter and serve.

I served mine up with some pasta and a salad for a wonderful weeknight dinner.  My family was very pleased and I was happy that it took so little hands on time with such great results.

No Knead Garlicky Dinner Rolls

These easy, no knead, dinner rolls are coated with garlic butter before and after baking. They are a wonderful addition to your dinner table.

Ingredients

  • 1/4 c. warm water (105-110*)
  • 2 T. + 1 t. sugar, divided
  • 1 packet instant dry yeast
  • 1 stick butter, room temperature, divided
  • 1 egg + 1 egg yolk
  • 1/3 c. warmed milk (105-110*)
  • 2 1/3 c. flour
  • 1 t. salt
  • 4 cloves garlic, minced
  • 1 t. dried Italian seasoning

Instructions

  1. in a small bowl combine 4 Tablespoons of the butter with the garlic and Italian herbs. Set aside.
  2. Measure out warm water in a one cup measuring cup. Stir in 1 teaspoon of sugar until dissolved. Sprinkle in the yeast and set aside until foamy, about 5 minutes.
  3. In large bowl of stand mixer, fitted with paddle attachment, cream together the butter and remaining 2 Tablespoons of sugar. Add the egg, egg yolk and milk. Mix for a couple of minutes and then stir in the proofed yeast mixture.
  4. Add the flour and salt. Mix on low speed until incorporated, then increase speed and mix for 5 or 6 minutes, until the dough forms into a ball and pulls away from the sides.
  5. Scrape from paddle and shape into a ball, return to the bowl, cover with a warm, damp towel and let rise until doubled, 1-2 hrs.
  6. Divide the dough into 8 equal pieces and place into a cast iron skillet that has been treated with cooking spray.
  7. Brush the rolls with about 1/4 of the garlic butter and set aside to rise for another hour. Bake in a preheated 350* oven for for 15-20 minutes, until golden brown. Remove from oven and brush with remaining garlic butter before serving.
