Asian Noodle Salad #ImprovCookingChallenge

This easy peasy pasta salad with a peanut butter and ginger dressing is a perfect side dish for serving at a potluck or a wonderful meatless entree.

Nichole of Cookaholic Wife invites us each month to join her in making a recipe that includes 2 ingredients of her choice.  This month's ingredients are ginger and peanuts.  YUM!!

Peanuts and ginger are a perfect marriage as proven by Asian Cuisine.  It is a combination that shows up here quite often.  Have tons of zucchini still?  Make some Zoodles in Peanut Sauce.  Fall is coming and this Pork and Cabbage Stir Fry is flavorful and delicious.  Going meatless?  This Vegetable Pad Thai has you covered.  Fish Friday?  How about some Kung Pao Shrimp?

This Asian Noodle Salad makes a great Vegetarian Main Course or can be used as a side dish.  My son in law does not eat meat so I always try to have a side that will work as a main when he is over. In this instance I served it along with some Pork Satay that the rest of us enjoyed.

Whatever you decide to make with Peanuts and Ginger it will be a welcome addition to your menu.  Enjoy!

Asian Noodle Salad

Asian Noodle Salad

This easy peasy pasta salad with a peanut butter and ginger dressing is a perfect side dish for serving at a potluck or a wonderful meatless entree.

Ingredients

  • 8 oz. brown rice spaghetti noodles
  • 1 (12 oz.) package Broccoli Slaw
  • 1 carrot, grated
  • 1/4 c. olive oil
  • 1/4 c. seasoned rice vinegar
  • 3 T. honey
  • 3 T. creamy peanut butter
  • 2 T. soy sauce
  • 1/2 T. chili garlic sauce
  • 1 T. ginger paste
  • 2 cloves garlic, minced
  • 3/4 c. roasted peanuts

Instructions

  1. Cook the pasta per package directions.  Drain and rinse with cold water to stop cooking.  Drain again and transfer to a large bowl with the broccoli slaw mixture and carrots.
  2. Whisk together the olive oil, vinegar, honey, soy sauce, chili garlic sauce, peanut butter, ginger and garlic.  
  3. Pour over the noodles, add the peanuts and toss to coat.  Can be served immediately at room temperature or chilled and served later.

  1. I love the combo of easy -peasy but it also looks healthy and satisfyingly tasty. The bagged broccoli slaw is a great idea.
