Grillled Beets with Caramelized Citrus Drizzle #FoodnFlix

This wonderful platter of golden and red baby beets is drizzled with citrus that has been caramelized on the grill, olive oil, sea salt and freshly cracked pepper.

 I was inspired to make this salad after watching the movie "Words on Bathroom Walls".........

I absolutely love this movie about a high school senior who has plans to go to culinary school and become a chef.  Unfortunately, he develops schizophrenia and it looks like his future is going to be very bleak.  He ends up expelled from school in the middle of the year.  His parents are able to get him into a Catholic school where he tries to fit in and hide his illness from the student body.

It is at this school that he meets the girl who is going to help him see that he is not his disability and he can go on to live out his life and his dreams.  He takes her to his favorite restaurant where they are seated overlooking the kitchen and he tells her that all he has ever wanted to do is cook and shares with her the trials and tribulations he has faced having developed this illness.

"The kitchen is my place. When I'm cooking itls like everything disappears and I'm the one in control".

This statement was made by Adam during that conversation.  It resonated with me because, while I don't hear voices in my head, I do suffer from depression and anxiety and the kitchen is my place too.  The kitchen is always where I run to when I need comfort and solace.  It is my place to forget all my worries and just be in the moment.

While there is tons of food inspiration in this movie, it was hard for me to remember the foods because I was so engrossed in the story of this amazing young man.  The beginning of the movie has him in the kitchen, serving meal after meal to his mother.  One of the plates shown was of a gorgeous composed salad of candy cane beets.

Beets

We love beets and I'm always looking for new ways to prepare them.  Unfortunately, my farmer's market didn't have any candy cane beets available when I went but they did have baby red and golden beets.

I wrapped them in foil, drizzled them with olive oil, salt and pepper, wrapped them up and put them on the top rack of my grill to roast.  Alternately, you can roast them in the oven, if it's not 94* F as it was here when I made this.

Grilled Citrus

When the beets were fork tender, about an hour, I opened the grill and laid an orange and a lemon that had been halved onto the bottom rack, flesh side down, until they were caramelized and had some nice grill marks.  While they cooked, I cut a stem of mint from my herb garden.

Rinse the beets under cold water and peel off the skins.  They should slip right off.  Cut them into quarters and arrange on a platter.  Squeeze the juice from the caramelized citrus over the beets, drizzle with some olive oil, sprinkle with salt, pepper and fresh mint and serve.

Grill Roasted Beets with Caramelized Citrus Drizzle

This wonderful platter of golden and red baby beets is drizzled with citrus that has been caramelized on the grill, olive oil, sea salt and freshly cracked pepper.

Ingredients

  • 2-3 lbs baby beets
  • olive oil
  • salt and pepper to taste
  • 1 orange
  • 1 lemon
  • 5-6 mint leaves

Instructions

  1. Lay a double layer of foil onto the counter.  Scrub and dry your beets.  Lay onto the foil, drizzle with olive oil, season with salt and pepper and enclose in the foil.
  2. Roast on top rack of a gas grill heated to high with the lid closed for 45-60 minutes, until fork tender.
  3. Cut the orange and lemon in half.  Place onto a hot grill and cook until caramelized and grill marks appear, about 4 minutes.  
  4. Remove to a plate and allow to cool while you rinse the beets under cold water to remove the skin.  
  5. Quarter the peeled beets and arrange onto a platter.  Squeeze the juice from the caramelized orange and lemon over the beets, drizzle with your best olive oil and season with cracked sea salt and freshly ground pepper.

  3. I spotted that beet dish. Just watched it this afternoon. Loved it and was surprised how much food was featured. Love this salad.
