I am a 2 cup of coffee drinker each morning. I rarely have coffee after 9 am unless it is in the form of a cocktail such as this Martini or perhaps a Frozen Irish Coffee or a White Russian.
I often use coffee in sweet bakes such as these Coffee and Bailey Mini Bundts, these scrumptious Coffee Cinnamon Rolls or these yummy Coffee and Cashew Biscotti.
Sometimes I use it for savory dishes as well. I used flavored coffee as a rub on this Fall Flavored Pork Tenderloin, dressed a beet salad with this Creamy Coffee Dressing and it was delicious braised on these Coffee Scented Short Ribs.
This delicious cocktail is the perfect dessert following a date night dinner when you want a little something sweet with your coffee but nothing to filling.
Affogato Martini
Ingredients
- 4 jiggers vanilla vodka
- 2 jiggers kahlua
- 1 jigger creme de cocoa
- 4 small scoops vanilla ice cream
Instructions
- Place the vodka, kahlua and creme de cocoa in a cocktail shaker with some ice. Shake until chilled. Strain equal portions into 2 chilled martini glasses. Add 2 small scoops of vanilla to each and serve.
