I don't know about you but I drink my coffee straight black. I have 2 or 3 cups each morning and very rarely drink it at any other time. But every once in a blue moon I like to have a cup after dinner and when I choose to do that I always add Bailey's Irish Cream.
I used my cupcake bundt pan for this event but you can use a regular size bundt pan or you can make regular cupcakes. It's all good.
I have great news. The doc called today and released us from quarantine. Yay. That means we will be heading north this weekend for Frank to hold a CPL class. So we are heading out early Friday morning and meeting our friends, the Bonacorsi's, for lunch on the way. I am making up a Mac and Cheese Casserole and Randy is going to fry up some fish for dinner when we all arrive.
Saturday I will be providing breakfast and lunch for the students. Others will be providing dinner so I'm not sure what is on the menu. We head out after breakfast on Sunday to get home in time to go to a restaurant where we will be celebrating our Sister in Law's Birthday.
We are celebrating Spring Sweets Week all next week so stay tuned for that. It is the last Fish Fry of the Lenten Season so I will be busy from Wednesday to Saturday but am happy that I can be involved again.

Coffee and Baileys Individual Bundts
These adorable little mini, cupcake size bundts, are flavored with instant coffee, brewed coffee and Bailey's Irish Cream and then glazed with more Baileys. They are the perfect individually sized dessert.
Prep time: 20 MinCook time: 20 MinTotal time: 40 Min
Ingredients
- 1 1/2 c. flour
- 2 t. instant coffee granules
- 3/4 t. baking powder
- 1/4 t. baking soda
- pinch of salt
- 1 stick butter, room temperature
- 1 c. sugar
- 2 eggs
- 1 t. vanilla
- 1/3 c. light cream (half and half)
- 1/4 c. strong black coffee, cooled
- 1/3 c.+ 2-3 T. Bailey's Irish Cream
- 1 c. powdered sugar
Instructions
- Sift together the flour, instant coffee, baking powder, baking soda and salt. Set aside.
- In large bowl of stand mixer, fitted with paddle attachment, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating after each. Stir in the vanilla.
- Combine the Coffee, Cream and Baileys. Turn the speed to low and stir in half of the coffee mixture, followed by half of the flour mixture until incorporated. Stir in the remaining coffee mixture and then the remaining flour mixture just until combined.
- Divide batter between the cupcake bundt wells that have been liberally treated with baking spray.
- Bake in a preheated 350* oven for about 20 minutes, until a skewer inserted removes cleanly.
- Let cool in pan on wire rack for 10-15 minutes before turning mini bundts out onto rack to cool completely.
- When completely cool. Sift the powdered sugar into a bowl. Whisk in the Bailey's, 1 Tablespoon at a time, until you reach desired consistency. Drizzle this glaze over the cooled cupcakes.20
