This salad, with it's Asian flavors, paired perfectly with a glass of Rose wine from Dracaena Wines. This made for a delicious light dinner. It is also a great take with salad for in you lunch if you are working outside the home or your kids are back in face to face school. Just pack the dressing seperately and toss it all together come lunchtime.

Chicken and Mandarine Orange Salad
This flavorful, crunchy salad using leftover chicken and packaged coleslaw mixture comes together quickly. In just a few minutes you will be serving up a colorful, nutritious dinner. Eat a Rainbow.....every day.

Ingredients
- 1/4 c. canola oil
- 1/4 c. rice wine vinegar
- 1 T. chili garlic sauce
- 1 scallion, white and light green section, minced
- zest of 1 orange
- 1/2 t. sesame oil
- 3 c. leftover chicken, diced
- 1 head romaine hearts, chopped
- 1 c. red and green slaw mixture with carrots
- 1 (15 oz) jar mandarin orange slices, drained
- 1 1/2 c. chow mein noodles
Instructions
- Whisk together the oils, vinegar, chili sauce, scallion and orange zest.
- Toss together the lettuce and coleslaw mixture with half of the dressing. Place onto a platter. Scatter the chicken, orange segments, and chow mein noodles over the top. Drizzle with remaining dressing and serve.

DeleteThat is one filling, nutritious and colorful salad. I wouldn't mind having it for dinner, though I'd probably replace the chicken with some tofu.
