Kielbasa and Cabbage Skillet #SundayFunday

This flavorful dinner is ready and on the table in less than an hour from start to finish.  It is budget friendly and high in fiber.

I used leftover roast fresh kielbasa in this skillet.  It is a great way to use up leftovers but I have also made it with smoked sausage.

Kielbasa and Cabbage Skillet

This skillet started out with leftover roast kielbasa that I had from Christmas Dinner.  I sliced it and sauteed it in a little olive oil with onions, to brown it a bit.

Then I added the sliced cabbage and a little water, covered it and let it cook until tender.  This recipe is a little different then what I have made before.  I found a recipe on Budget Bytes that used a vinaigrette to dress the dish after it was done cooking.  This is a great addition to this dish and a bit of flavor and bite to it.  I think it will be a regular addition from now on.

Kielbasa and Cabbage Skillet

This flavorful dinner is ready and on the table in less than an hour from start to finish. It is budget friendly and high in fiber.

Ingredients

  • 1/4 c. olive oil, divided
  • 2 T. red wine 
  • 1 T. stone ground mustard
  • 1/4 t. garlic paste
  • salt and pepper to taste
  • 12 oz. leftover fresh roasted kielbasa, cut into rounds
  • 1/2 Vidalia onion, chopped
  • 1/2 head of cabbage, cored and sliced

Instructions

  1. Heat 1 Tablespoon of the olive oil in a large skillet over med high heat.  Add the kielbasa and onions.  Cook and stir until kielbasa is browned in spots and onion is translucent.
  2. Add the cabbage and a couple of Tablespoons of water to the skillet, cover and cook, stirring occasionally, until cabbage is tender, about 30 minutes.
  3. While cabbage cooks, whisk together the remaining olive oil, vinegar, mustard, garlic, salt and pepper.  When cabbage is tender, pour the vinaigrette over all and toss to coat.  Remove from heat and serve.

  3. This is a favorite at my house too, Wendy. Sometimes I use pork ribs instead of the sausage but we love it either way. The vinaigrette at the end is new to me but I can see why it works. I'll definitely give that a try next time.

  6. We always have so much sausage in our freezer, and now I know what to do with it next time! I'm going to have to put cabbage on my market list for sure!
