Honey Cornbread Muffins #MuffinMonday

Honey Cornbread Muffins

Honey Cornbread Muffins

These corn muffins sweetened with honey are the perfect accompaniment to a bowl of hot soup or stew on a cold winter's night.
Prep time: 5 MinCook time: 15 MinTotal time: 20 Min

Ingredients

  • 1 c. cornmeal
  • 1 c. flour
  • 1 T. baking powder
  • 1/2 c. sugar
  • pinch of salt
  • 1 c. milk
  • 2 eggs
  • 4 T. butter, melted and cooled
  • 1/4 c. honey

Instructions

  1. Whisk together the flour, cornmeal, baking powder, sugar and salt.  Set aside.
  2. Whisk together the milk, eggs, butter and honey.  Pour into the flour mixture and stir just until combined.
  3. Divide between 9 muffin cups that have been lined with paper liners or sprayed with baking spray.
  4. Bake in a preheated 400* oven for 15 minutes, until golden brown and a skewer inserted into the center of a muffin removes cleanly.

  2. We do serve cornbread with soup on occasion but it's a must if we are eating chili. Your honey muffins would be popular at our house as well, Wendy.
