The Sunday Funday group are celebrating Dairy today........

Rebekah of Making Miracles is hosting this week and asked us to share recipes in honor of National Milk Day which is celebrated tomorrow.

I wanted to find a recipe that my readers could make with the ingredients they had on hand so they didn't have to stop at the store today.  Let's see what the others are sharing.............

Chocolate Pudding

I had originally doubled this recipe to serve as dessert for a dinner party of 8 over the holidays.  At the last moment, the TEEN invited a friend over so I stretched the recipe to serve 9.   A dollop of whipped cream and nobody realized that their bowls were a bite or two short.

This pudding is so decadent, creamy and delicious that you will be scraping the bowl wishing for more.  Luckily it is so quick and easy to make you can whip some more up for dessert the following night.  You may never buy a box of pudding mix ever again.

Homemade Chocolate Pudding

Less than 10 ingredients and 10 minutes to a creamy chocolate treat that your family will love. This has been a family favorite in my household for nearly 50 years.
Prep time: 5 MinCook time: 10 Mininactive time: 2 HourTotal time: 2 H & 15 M

Ingredients

  • 1 1/3 c. sugar
  • 1/2 c. cocoa powder
  • 1/3 c. + 1 T. cornstarch
  • lg. pinch of salt
  • 4 1/2 c. milk (I used 2%)
  • 1/2 stick butter, cut into 4 pieces
  • 2 t. vanilla
  • 1 c.  heavy cream
  • 1 T. powdered sugar

Instructions

  1. Combine the sugar, cocoa, cornstarch and salt in a large saucepan.  Place over med high heat and gradually whisk in the milk.  Cook and stir until the mixture comes to a boil.  Cook and stir for one minute longer, remove from heat and stir in the butter and vanilla.
  2. Divide between 8 dessert bowls.  Cover with plastic wrap, pressing down onto the pudding to prevent skin from forming.  Place into the refrigerator for a minimum of 2 hrs and up to 24 hrs.
  3. When ready to serve, place the cream and powdered sugar into the small bowl of a stand mixer fitted with the whisk attachment.  Start mixing on low speed, increasing the speed as cream thickens and whisking until light and fluffy.  Remove the plastic wrap and place a dollop of whipped cream on top of each serving.
