I love squash of all kinds. Butternut, Acorn, Spaghetti, Summer.....but my very favorite of all is Delicata Squash. It is so sweet and tender when roasted and so easy to prepare. This is mostly because you don't need to peel it before roasting. Simply give it a good scrub, slice it in half, remove the seeds, cut into half moons and roast. The peel crisps up and adds to the texture of the dish. The TEEN was so crazy about this recipe she asked me to make it again the following day.
This dish is one that you are sure to make again and again. It is the perfect recipe....easy, peasy and delicious.

Maple Glazed Delicata Squash
This easy and delicious squash makes the perfect side dish for Thanksgiving or any Fall Comfort Meal. No need to peel the squash, roast it until nice and crisp and the skin adds to the wonderful flavor and texture of this dish.
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 2 Delicata Squash, scrubbed, halved, and seeded
- 1 T. olive oil
- 1 T. maple syrup
- salt and pepper, to tasteCut the squash into half moons, approximately 1/4" thick. Toss with olive oil, maple syrup, salt and pepper. Spread onto a baking sheet that has been covered with parchment or a silicone mat.
- Bake in a 350* oven for half an hour, until caramelized and starting to crisp.
