I saw this really cute recipe for a meatloaf baked in a bundt pan and "frosted" with mashed potatoes. It was a fun recipe and I was going to make it but then I realized that another event I am partaking in, #Berry Week, was going on today as well.
I had decided to make a Strawberry and Rhubarb BBQ Sauce that I am also sharing this morning for that event. So instead of "frosting" my meatloaf bundt with potatoes I decided to glaze it with this amazing BBQ Sauce.
I was only feeding 3 of us for dinner on this night so I only used 1 lb. of ground beef. Since it was going to be a small meatloaf, I decided to use my cupcake bundt pan to bake them.
Once they were baked, I turned them onto a baking sheet, lined with foil, poured some of the BBQ sauce over each one and placed them under the broiler to set the glaze.
I served them up with a side of Smoked Mac and Cheese and a carrot and pea mixture. It was a fun and delicious dinner.
This recipe can be easily doubled and made in a regular bundt or loaf pan to feed a larger family or to enjoy as meatloaf sandwiches the next day. YUM
Mini Meatloaf Bundts with Strawberry Rhubarb BBQ Sauce
Yield: 4 servings
Prep time: 10 MCook time: 50 MTotal time: 60 M
These adorable little meatloaves were made in cupcake size bundt pans making 2 or 3 the perfect serving size.
Ingredients:
- 1 lb. ground beef
- 1/3 c. old fashioned oats
- 1/2 small onion, minced
- 1/4 c. ketchup
- 1 egg
- 2 t. Worcestershire sauce
- 1 clove garlic, minced
- salt and pepper, to taste
- Strawberry Rhubarb BBQ Sauce
Instructions:
- Place the ground beef, oats, ketchup, onion, garlic, egg, Worcestershire sauce, salt and pepper into a large bowl. Using clean hands, mix until well combined.
- Divide the mixture between 9 cupcake size bundt forms.
- Place in a preheated 350* oven for 40-50 minutes, until an internal temperature of 160* is met.
- Remove from oven and turn onto a baking sheet that has been covered with aluminum foil. Pour desired amount of BBQ sauce over each and place under the broiler for 3 minutes or until glaze is set.

DeleteYour little Bundts are lovely, Wendy, but I really can't wait to see the barbecue sauce recipe! Sweet strawberries and tart rhubarb are a great combination for sauce.
