I'm very excited to try some of these recipes. Doesn't BBQ Beef Brisket chili sound divine? Or how about Buffalo Chicken Chili? That sounds amazing to me. And I have to say that the Buckeye chili has caught my attention too. I wonder if there is peanut butter and chocolate in that chili?
My recipe caught my eye when I was flipping through an old issue of Cuisine at Home. I go through these magazines every year and am always surprised when something jumps out at me that I passed right by the first hundred times I looked at it.
I love Fajitas and the idea of Steak Fajita Chili was very appealing to me. I also was drawn to this recipe because October is Texas Wine Month, yes that is a thing, and I thought the flavors of this chili would complement a wine from Texas that I had in my wine fridge.
You can tell Fall is here because Chili is perfect for this time of year. I recently posted this amazing Roasted Garlic Turkey Chili. And if you are serving up bean salsa while watching the game this weekend make sure you save some so you can make this Leftover Bean Salsa Chili. If you are counting calories the Turkey Chili is Fast Metabolism Diet friendly and nobody will know that you are staying healthy.
If you are a Steak Fajita fan then this is the Chili for you. Tender chunks of steak, sweet onions, green bell peppers in a tomato base flavored with fajita seasoning. Add the toppings of your choice and dig in.

Steak Fajita Chili
If you are a Steak Fajita fan then this is the Chili for you. Tender chunks of steak, sweet onions, green bell peppers in a tomato base flavored with fajita seasoning. Add the toppings of your choice and dig in.
prep time: 20 Mcook time: 4 hourtotal time: 4 H & 20 M
ingredients:
- 2 lbs. round steak, trimmed and cut into chunks
- 1 T. olive oil
- 1/4 c. tequila
- 3 T. fajita seasoning
- salt and pepper, to taste
- 1 qt. tomatoes, crushed, with juice
- 1 lg. green bell pepper, cored, seeded and cut into chunks
- 1 sm. sweet onion, diced
- 3 garlic cloves, minced
- 1 1/2 c. beef stock
- 2 T. flour
- 1 (15 oz.) can black beans, rinsed and drained,
- Shredded cheese, if desired
- Sour cream, if desired
instructions:
How to cook Steak Fajita Chili
- Heat oil in a skillet over med high heat. Season the beef chunks with salt and pepper and add the beef to the skillet. Cook until browned on both sides, about 5 or 6 minutes. Add the tequila to the skillet. Cook and stir, scraping up any browned bits stuck to the bottom of the skillet, until the liquid is mostly evaporated. Transfer the meat to a slow cooker.
- Add the tomatoes, peppers, onions, garlic and fajita seasoning to the slow cooker. Whisk together the flour and beef stock, add to the slow cooker along with the beans. Cover and cook on high for 4 hrs.
- Serve with shredded cheese and sour cream, if desired.20

I love fajitas so I know this would be a hit. Don't you just love when going through old cooking zines the inspiration flies? I need to clean out my stacks so know I will have ideas backed up to the horizon---until I have to clean them out again. Especially the ones I have no idea why they are being sent as I did not subscribe (Food and Wine is one)--not sure if it is a blog thing or someone with money to burn is having a good giggle thinking I need to be taught how to cook, but if that's the case their joke is just too mental to be worth it. Don't ask me. In the meantime I won't complain as I like cooking magazines (and spend way too much on them anyway).
ReplyDeleteI wouldn't mind if someone sent me Food and Wine. I love that publication. The only one I subscribe too is Cuisine at Home. Have been doing so for nearly 20 yrs. now.
DeleteI get Bake from Scratch and Taste of the South. I got a really good deal on the script- as for others I pick and choose at the newsstand if they look really good. I can sometimes catch up on Cuisine at Home at the used bookstore where someone releases their stockpile every few months and I can get those for about 25-50 cents each.

ReplyDeleteI remember the first time I ever saw fajitas -- a really exciting dish because it was so sizzling hot and newly cooked. This is a quieter version but sounds delicious.
