Air Fryer Pumpkin Seeds and the Weekly Menu

Don't throw away those seeds when you carve your pumpkin. This easy and delicious recipe using an Air Fryer will have you enjoying them in no time!!


It is a great way to extend the family fun after carving the pumpkins.  I roasted these up and served them as part of an appetizer buffet before our daughter's birthday dinner.



Having family dinner is one of my favorite ways to spend the weekend.  We don't all manage to get together very often as we all live busy lives and it is hard to get 10 adults, 1 Teen and 1 Angel Face free all at the same time.

But I still try to plan a family dinner at least once a month and those that are available come and those that aren't are sorely missed.



I'm very excited this month because not only did our great niece, Lili, come for Amy's Birthday Dinner, but this weekend she is bringing her boyfriend and others for dinner on Saturday.   I think I am the last member of the family not to meet her beau as we weren't able to get up north to celebrate Spence's birthday.

We have my great niece Aurora's birthday party in the afternoon so I am making Stuffed Cabbages for Lil's gang as it can be made ahead of time and rewarmed when we get home from Rory's party.

Monday I have a meeting at church after which I am grabbing Marissa and Kirsten and we are going down to meet Amy at a sled painting party being put on by friends of many many years.  I'm looking forward to that.  Frank is going to be on his own for dinner.

Our Little Miss has her second piano lesson on Tuesday after school.  Other than that our week is typical.  Here's what we'll be eating.

ingredients:

  • 1 1/2 c. pumpkin seeds, cleaned of pulp and rinsed
  • 1 T. butter
  • seasoning salt, to taste

instructions:

How to cook Air Fryer Pumpkin Seeds

  1. Toss the pumpkin seeds with the butter and seasoning salt.  Place in your air fryer basket or tray in a single layer.  Cook at 350* for 10-15 minutes until toasted brown.
