The inside is soft and reminds me of Lychees, another Asian fruit with which I am familiar. I have never used fresh Lychees though and have relied on canned for any applications in which I used them.
Rambutans open easily. Just a little slice on the side with a pairing knife and the skin peels right off with your fingers. The fruit is the texture of a peeled grape. There is a seed about the size of an almond inside that squeezes out with a little pressure. They are sweet, juicy and delicious.
These Rambutans were part of a large package of #FreakyFruits that I received from Melissa's Produce for an event that is being hosted by my friend Cam of Culinary Adventures with Camilla. We are all posting recipes together on both October 12 and October 19 featuring some of these freaky fruits in a 2 day event that Cam calls Freaky Fruit Friday.
I have some great recipes to share with you on those days but, holy cow, there was a lot of fruit to play with so I ended up with several more that I am sharing in separate posts.
I shared a fruit platter featuring Kiwano a couple of days ago. I have shared many recipes using pomegranate including one of my favorite salads to serve during the holidays. I have scheduled a recipe using the blood oranges in an upcoming post for Eat the World so stay tuned for that.
There were no lychee in this basket but there were the rambutans which are very similar. One of my favorite lychee recipes is this martini that I love so I knew I wanted to do something similar with the rambutans.
I peeled and pitted the rambutans and Frank got to work muddling the fruit. We added some simple syrup, almond extract, lime and vodka. Filled the shaker with ice and shook the heck out of it to mix it well and chill it completely.

These cocktails are made with an Asian fruit knows as Rambutan. I had never heard of this exotic, freaky fruit before but I think I will be seeking it out every chance I get.
prep time: 5 minscook time: total time: 5 mins
ingredients:
8 Rambutans, peeled and seeded
1/4 c. simple syrup
1/2 t. pure almond extract
juice of 1/2 a lime
3 jiggers of vodka
ice
instructions
Place the rambutans in a cocktail shaker. Using a muddler or the handle of a wooden spoon, smash the rambutans to release all their juices. Add the simple syrup, almond extract, lime juice and vodka to the shaker. Fill with ice, seal and shake until well blended and chilled. Strain into 2 chilled martini glasses.
